Princess and the Frog [Week 1] – Shrimp Gumbo, Beignets, Flapjacks, Keylime pie

We’re finally on Princess on the Frog! We love Cajun and southern food in the Disney Meals home so this is awesome for us. There was so much food that we’re splitting it into 3 different posts! This post has some of the most iconic Princess and the Frog foods, many of the recipes taken from the official Princess and the Frog cookbook. We had some friends graciously come and help eat this wonderful food too!

Tiana’s Dad’s Gumbo

Gumbo to share with the whole neighborhood!

The Tabasco really adds a great kick! Tiana and her dad can really make some great gumbo. Here’s a recipe for some of the best gumbo I’ve had, coming straight from the Princess and the Frog cookbook.

Ingredients
  1. 1 cup butter
  2. 1 cup flour
  3. 1 onion, chopped
  4. 2 ribs celery
  5. 4-5 cloves garlic, minced
  6. 4 bay leaves
  7. 2 quarts water
  8. 1 lb shrimp
  9. 1 lb andouille sausage
  10. 1 lb okra
  11. 20oz diced tomatoes (half drained)
  12. Cajun spices
  13. Salt and Pepper to taste
  14. Tabasco (to taste)
  15. Rice (to serve on)
Instructions
  1. Cook sausage in some oil until browned.
  2. Remove the sausage and add onion and garlic, cook until caramelized
  3. In a large pot, add 1lb butter until it melts.
  4. Add 1 cup flour and make a roux
  5. Add in onions and garlic, then celery, ocra, salt, pepper, and cajun spices. Mix and let sizzle for a couple minutes.
  6. Add water and diced tomatoes
  7. Add bay leaves.
  8. Bring to boil
  9. Turn heat down to a medium or medium low to simmer
  10. Add the sausages, cover and cook for 30 minutes
  11. Add the shrimp, cover and cook for 15 more minutes.
  12. Serve over rice!

Tiana’s Beignets

At the restaurant and at the party, Tiana serves some amazing beignets.

I love beignets ever since we visited New Orleans and had beignets at the Cafe du Monde. These weren’t as good as the ones at Cafe du Monde, but they were really good, coming straight from the Princess and the Frog cookbook

Ingredients
  1. 2 3/4 cups flour
  2. 1/3 cup sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon nutmeg
  7. 1 cup buttermilk
  8. 1/3 cup water
  9. 1 egg, beaten
  10. 1/2 teaspoon vanilla extract
  11. Vegetable oil, for frying
  12. Confectioners’ sugar, for dusting
Instructions
  1. In a medium bowl, combine 2 3/4 cups of the flour with the sugar, baking powder, baking soda, salt, and nutmeg. Whisk everything together.
  2. In a large bowl, whisk together the buttermilk, water, egg, and vanilla extract. Stir in the flour mixture from Step 1.
  3. Use some of the remaining flour to dust your work surface. Place the dough on it and pat it into a large 1/2 -inch-thick square. Dust the top with more flour if it gets sticky. Next, slice the dough into 2 1/2 -inch squares.
  4. Now it’s time to fry the beignets—be sure to ask an adult to help you! Heat 2 inches of vegetable oil in a heavy saucepan on the stove top until the temperature reaches 325° on a deep fat thermometer. Check the temperature with a cooking thermometer every so often while cooking. If it gets too hot, temporarily turn the heat down, or off.
  5. Carefully drop 3 dough squares at a time into the hot oil. Fry them for 3 minutes, turn them over, and continue frying for 3 more minutes. Use a slotted spoon to transfer the beignets to a wire rack set atop paper towels to drain. Dust the beignets with confectioners’ sugar, and enjoy!

Restaurant Flapjacks

Part of the food Tiana serves at the diner, was flapjacks.

I made some homemade pancakes that were LITERALLY the best pancakes I’ve ever eaten.

Ingredients
  1. 3 cups all-purpose flour
  2. 3 tablespoons white sugar
  3. 3 teaspoons baking powder
  4. 1 1/2 teaspoons baking soda
  5. 3/4 teaspoon salt
  6. 3 cups buttermilk
  7. 1/2 cup milk
  8. 3 eggs
  9. 1/3 cup butter, melted
Instructions
  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, beat together buttermilk, milk, eggs and melted butter.
  3. Keep the two mixtures separate until you are ready to cook.
  4. Heat a lightly oiled griddle or frying pan over medium high heat.
  5. You can flick water across the surface and if it beads up and sizzles, it's ready!
  6. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend.
  7. Stir until it's just blended together. Do not over stir!
  8. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake.
  9. Brown on both sides and serve hot.

Keylime Pie

This is shown in Tiana’s song when she’s dreaming about her own restaurant.

Keylime pie is great and surprisingly easy to make.

Ingredients
  1. 1 prepared 9" graham cracker crust
  2. 4 large egg yolks
  3. 1 14oz can sweetened condensed milk
  4. 1/2 cup key lime juice
  5. 2 tsp finely grated lime peel
  6. 1 tsp sugar
  7. Whipped Cream
Instructions
  1. Preheat oven to 350ºF
  2. Beat the egg yolks until they are thick and light yellow with an electric mixer
  3. Add the condensed milk and mix on a low speed
  4. Gradually add the lime juice
  5. Mix until just blended.
  6. Pour the mixture into pie shell and bake for 15 minutes
  7. Remove and let cool
  8. Mix the lime peel with the sugar
  9. Add the whipped cream and sugared lime peel and chill in fridge for 1+ hours.

  1. I remember when I first attempted to make the beignets. I was so messy that I almost covered myself in hot oil. XD Seriously though, these look amazing and I’m sure you put a lot of effort into these recipes. Can’t wait to try some of these. See you in week 2! 🙂

  2. Do you suppose that when you get to the end of the feature films, you’ll move on to Disney’s other stuff? The shorts, TV shows, etc.? I’ve always wanted to try the Wise Little Hen’s corn bread…

    • Ya, I haven’t decided what I’ll do after. Doing other shows and cartoons is definitely a possibility. I’ll keep that cornbread in mind!
