We’re back after a hiatus. I meant to post a couple weeks ago, but we ended up leaving for Thanksgiving earlier than I expected, so I wasn’t able to post. So instead of 3 weeks of Wreck-it Ralph, you get one big week and a smaller week!  This is great for Christmas time because there are so many sweets, you won’t even know what to do.  We aren’t going to make ALL the candies shown in the movie, because that would take a blog unto itself. Plus, most candies shown are most commonly store-bought.  But we do have some great recipes for you from Disney’s Wreck it Ralph!

Fix it Felix Anniversary Cake

At the beginning part of the movie, the characters from Fix it Felix through an anniversary party. One of them bakes a cake that’s a replica of the building they live in. She even goes through and names all the cake flavors, Red Velvet, Lemon, Rum and Vanilla. She doesn’t get to the vanilla, but it is mentioned in a Wreck it Ralph children’s book.

So we got to make all of these cakes!  The rum was the best, followed by the lemon.

  1. Vegetable oil for the pans
  2. 2 1/2 cups all-purpose flour
  3. 1 1/2 cups sugar
  4. 1 teaspoon baking soda
  5. 1 teaspoon fine salt
  6. 1 teaspoon cocoa powder
  7. 1 1/2 cups vegetable oil
  8. 1 cup buttermilk, at room temperature
  9. 2 large eggs, at room temperature
  10. 2 tablespoons red food coloring (1 ounce)
  11. 1 teaspoon white distilled vinegar
  12. 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350 degrees F. Lightly oil and flour 1 9x13 cake pan.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another large bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
  4. Using a standing mixer, mix the dry ingredients into the wet ingredients until just combined and a smooth batter is formed.
  5. Pour the batter in the cake pan.
  6. Place the pan in the oven evenly spaced apart.
  7. Bake until the cake pulls away from the side of the pans, and a toothpick inserted in the center of the cakes comes out clean, about 30 minutes.
  8. Remove the cake from the oven and run a knife around the edges to loosen them from the sides of the pans.
  9. Invert the cake onto a plate and then re-invert it onto a cooling rack, rounded-sides up. Let cool completely.

  2. 2 1/2 cups granulated sugar, divided
  3. 4 extra-large eggs, at room temperature
  4. 1/3 cup grated lemon zest (6 to 8 large lemons)
  5. 3 cups flour
  6. 1/2 teaspoon baking powder
  7. 1/2 teaspoon baking soda
  8. 1 teaspoon kosher salt
  9. 3/4 cup freshly squeezed lemon juice, divided
  10. 3/4 cup buttermilk, at room temperature
  11. 1 teaspoon pure vanilla extract

  5. Preheat the oven to 350 degrees F. Grease and flour 1 9x13 pan. You may also line the bottom with parchment paper, if desired.
  6. Cream the butter and 2 cups granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy, about 5 minutes. With the mixer on medium speed, add the eggs, 1 at a time, and the lemon zest.
  7. Sift together the flour, baking powder, baking soda, and salt in a bowl. In another bowl, combine 1/4 cup lemon juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour.
  8. Pour batter in pan, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  9. When the cake is done, allow to cool for 10 minutes.
  10. Remove the cake from the pan and set it on a rack set over a tray or sheet pan.
  11. Allow the cake to cool completely.

  2. 1 (3.4 ounce) package instant vanilla pudding mix
  3. 4 eggs
  4. 1/2 cup water
  5. 1/2 cup vegetable oil
  6. 1/2 cup dark rum
  7. 1/2 cup butter
Instructions
  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 pan.
  2. In a large bowl, combine cake mix and pudding mix.
  3. Mix in the eggs, 1/2 cup water, oil and 1/2 cup rum.
  4. Blend well.
  5. Pour batter in the pan.
  6. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Let sit for 10 minutes in the pan, then turn out onto serving plate.

  4. 1 teaspoon fine salt
  5. 2 cups granulated sugar
  6. 1/2 cup vegetable oil
  7. 5 large eggs, at room temperature
  8. 1 tablespoon pure vanilla extract
  9. 1 cup milk
Instructions
  1. Preheat the oven to 350 degrees F. Butter the bottoms and sides of a 9x13 cake pan; dust with flour, and tap out the excess.
  2. Whisk together the flour, baking powder and salt in a medium bowl; set aside.
  3. Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
  4. Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Pour into pan.
  5. Bake the cake on the same oven rack until golden on top and the centers spring back to the touch, 35 to 40 minutes.
  6. Let cool in the pan about 10 minutes, then turn out onto cooling rack and let cool completely.

Ingredients
  1. Cake

  3. Melting Chocolate
Instructions
  1. Dump a whole container of frosting into a bowl with cake.
  2. Use your hands and mix the frosting into the cake
  3. Shape the frosting cake into balls
  4. Chill the balls for 30+ minutes.
  5. Melt the chocolate according to instructions on package
  6. Dip the cake balls into the chocolate, place on a baking sheet with parchment paper.
  7. Chill the balls until the chocolate hardens.

Ingredients
  1. 8 oz milk chocolate chips or morsels
  2. 16 oz caramel squares (remove wrapper)
  3. 1 can(s) (12 oz) evaportaed milk
  4. 2 c white sugar
  5. 1/2 c (1 stick) butter cut into chunks
  6. 1 3/5 c mini marshmallows
  7. 2 tsp vanilla extract
  8. 1/8 tsp salt
Instructions
  1. Prepare an 8" X 8" glass or non-stick baking pan.
  2. Place foil inside and butter the foil.
  3. Do not use cooking spray
  4. Make the caramel sauce by placing caramel and 1oz of evaporated milk in a microwave safe bowl, melt on medium heat for 30 seconds at a time
  5. Melt the mixture and continue to stir until completely mixed.
  6. Set caramel sauce aside for now.
  7. In a 2 quart saucepan combine the sugar, 2/3 cup evaporated milk, marshmallows, butter and salt.
  8. Stirring constantly over medium/high heat bring to a boil and continue to boil for an additional 5 minutes (this is important, do not boil for more than 5 minutes or less than 4).
  9. Remove from heat and add in the vanilla and chocolate. Stir until the chocolate is melted and the mixture is completely combined.
  10. Pour mixture into prepared pan, bang pan gently on table to remove any large air bubbles.
  11. Pour the caramel mixture over the top of the fudge. Using a knife swirl the caramel into the fudge.
  12. You may need to put the caramel back in the microwave for 30 seconds
  13. Allow the fudge to come to room temperature. Now place the pan in the refrigerator for 30 minutes to set the fudge. Remove the pan from the fridge, using the foil ends carefully remove the fudge from the pan. While the fudge is still cold use a large sharp knife to cut it into desired portions. Store leftover fudge in an airtight container in a cool dark place.

Cave Peanut Brittle

Inside of Vanellope’s cave, it is made from tons of Peanut Brittle.

I had to be really careful making this because my wife is severely allergic to peanuts. I only got to try a little before giving the rest away.

Ingredients
  1. 1 cup white sugar
  2. 1/2 cup light corn syrup
  3. 1/4 teaspoon salt
  4. 1/4 cup water
  5. 1 cup peanuts
  6. 2 tablespoons butter, softened
  7. 1 teaspoon baking soda
Instructions
  1. Grease a large cookie sheet. Set aside.
  2. In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
  3. Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

Laffy Taffy

Felix uses the Laffy Taffy to rescue himself and Calhoun from the Nesquik sand. 

Something went wrong when I was making the Taffy, it became very liquidy and wouldn’t harden. I don’t know what went wrong. Maybe you’ll have better luck

Ingredients
  1. 2 1/2 cups white sugar
  2. 3 tablespoons cornstarch
  3. 1 cup corn syrup
  4. 1 1/3 cups water
  5. 2 tablespoons butter
  6. 1/2 teaspoon salt
  7. 1 (0.13 ounce) package unsweetened, fruit-flavored soft drink mix
Instructions
  1. Butter 2 large baking sheets, and set them aside.
  2. In a medium saucepan, stir together the sugar and cornstarch. Add corn syrup, water, butter and salt, and stir to blend. Bring to a boil over medium heat, and cook until the mixture reads 250 degrees F (120 degrees C) on a candy thermometer. Remove from heat, and immediately stir in the drink mix powder. Quickly pour out onto the prepared baking sheets, and let stand until cool enough to handle.
  3. Grab a few helpers, and butter everyone's hands. Stretch (pull) the taffy until it lightens in color, and becomes firm. Roll into bite size pieces, and wrap in small squares of waxed paper.

All the food was great and super sugary. Even the liquid taffy was tasty, but very sweet. We loved the fudge and the cakes.

Brave – Sweet Scottish Buns, Spell Cake, Haggis

I love the setting of Brave. It is such a cute movie. I was excited to make some good Scottish food. So get your haggis ready, here’s the food for Brave!

The Triplet’s Scottish Sweet Buns

These buns appear quite a bit, and boy to the triplets love them. 

I tried to find a historically accurate recipe for these, but I don’t think these buns are historically accurate. They didn’t have glaze like that back then. I ended up using a modified recipe for Hot Cross Buns, which existed in England at least, around that time.

Ingredients
  1. 3/4 cup warm water (110 degrees F/45 degrees C)
  2. 3 tablespoons butter
  3. 1/4 cup honey
  4. 3/8 teaspoon salt
  5. 1 egg
  6. 1 egg white (save the yolk)
  7. 3 cups all-purpose flour
  8. 1 tablespoon active dry yeast
  9. 1/2 teaspoon ground cinnamon
  10. 1/4 teaspoon nutmeg
Wash
  1. 1 egg yolk
  2. 2 tablespoons water
Icing
  1. 1 cup confectioners' sugar
  2. 1/2 teaspoon vanilla extract
  3. 2tbs milk
  4. Maraschino Cherries
Instructions
  1. Put warm water, a bit of honey or sugar and yeast in a bowl. Let proof for 10 mins.
  2. Add butter, 1/4 cup honey, salt, egg, egg white (save the yolk for the wash), cinnamon, nutmeg and flour.
  3. Mix when and then knead for 5 minutes.
  4. Set aside and let rise until doubled.
  5. Punch down on floured surface, cover, and let rest 10 minutes.
  6. Shape into 12 balls and place in a greased 9 x 12 inch pan. Cover and let rise in a warm place till double, about 35-40 minutes.
  7. Mix egg yolk and 2 tablespoons water. Brush on balls.
  8. Bake at 375 degrees F (190 degrees C) for 20 minutes. Remove from pan immediately and cool on wire rack.
Icing
  1. Mix together confectioners' sugar, vanilla, and milk. Top the buns with icing and add a half of a cherry on each

The Witch’s Spell Cake

This is the cake that turns Merida’s mom and brothers into bears. 

I was a little more flexible with this recipe, because the witch has magic. I made a sponge cake, and sponge cakes weren’t created for another few hundred years. But It seems to fit.  The cake is supposed to be tarte and gummy….but sadly, I messed up and added too much sugar, but the recipe provided should remedy that.

  1. 250g Sugar
  2. 250g Butter
  3. 250g Flour
  4. 1 tsp baking powder
  5. 1 tsp baking soda
  6. 1/2 tsp vanilla
  7. 4 Eggs
Cherry Mix
  1. 1 lb pitted cherries
  2. 1 tbs lemon juice
  3. 2 tbs corn starch
  4. 1/4 cup sugar
Instructions
  1. Mix sugar and butter together in a mixer or a bowl until smooth.
  2. Add in the eggs and vanilla. Mix until smooth.
  3. The final step is simply to fold in the flour until fully mixed through and you've added air with the folding.
  4. Cook in a moderate oven around 325F.
  5. Add the mixture to greased small cake pans or cupcake tin.
  6. Cook for 20 minutes or until toothpick comes out clean
Cherry Filling
  1. Over a low heat add the cherries and sugar
  2. Cook until the cherries become soft enough to mush into powder
  3. Mix together corn starch and lemon juice
  4. Add that mixture to the cherries.
  5. Bring to a boil, then reduce again to a simmer
  6. Simmer until thickened
Assemble
  1. Use a small spoon to scoop out the middle of the cakes. Fill the hole with the cherry mixture.
  2. Remember to patch things up with your family before you become a bear.

Haggis

When the family is sitting down to eat, the triplets have haggis.

 

I’ve always wanted to try haggis, but sadly, I found out that the USDA doesn’t approve most of the ingredients that you need for haggis. I found a mock-haggis recipe that uses ingredients found in the USA. But I’ll have to try real haggis sometime.

Ingredients
  1. 1 beef bung (or sausage skins)
  2. 1/2 lb "old fashioned" oats
  3. 4 tbsp butter
  4. 1 large onion, chopped
  5. 3 lbs lamb meat, in chunks
  6. 1 lb beef liver, in large chunks
  7. 1 tbsp allspice
  8. 2.5 tbsp salt
  9. 1 tbsp pepper
  10. 1 tbsp mustard powder
  11. 1 lb lard (suet would be better, if available)
  12. 1 cup beer
Instructions
  1. Rinse the beef bung thoroughly, inside and out. Soak in lukewarm water for at least 1 hour.
  2. Toast the oats on a cookie sheet in a 350F oven for about 20 minutes, stirring occasionally.
  3. Saute the onion in the butter until translucent, and allow to cool.
  4. Mix the spices, onion, lamb, liver, oats and lard in a large ziplock bag. Put in the freezer until quite cold (even stiff) but not frozen.
  5. Grind the meat mixture using a large die. If you don’t have a grinder, chopping everything up into very small pieces might do the trick. Use less beer in the next stage if you go this route.
  6. Put the meat mixture in a Kitchen Aid on low setting for one minute. Add the beer, and mix on medium for one minute, until everything gets sticky.
  7. Cut the bung into three equal pieces. One will be closed at one end, open at the other, while the other two will be open at both ends. Sew one end of the two-ended pieces shut with a needle and (strong) thread.
  8. Stuff each bung bag with the meat mixture. Squeeze out all the air, but leave some slack in the bag so that the contents can expand. Sew each bag shut.
  9. Unless you have a big Burns Supper planned, you should probably put two of the haggises in the freezer at this point.
  10. Bring a large pot of water to a simmer, and add the haggis. Simmer gently for at least three hours.

Winnie the Pooh – Honey Pumpkin Squares

The new Winnie the Pooh movie is severely underrated. I think it is the funniest Disney movie since Emperor’s New Groove. There are so many great lines. Sadly, there aren’t too many foods shown. So we decided to make a fall inspired honey pumpkin recipe.

Crust
  1. 1 cup flour
  2. 1 cup quick-cooking oats
  3. 1/2 cup butter or margarine, softened
  4. 1/4 cup packed brown sugar
Filling
  1. 2 cans (15 oz each) pumpkin (not pumpkin pie mix)
  2. 4 eggs
  3. 1 cup half-and-half
  4. 1 cup honey
  5. 3/4 cup packed brown sugar
  6. 2 teaspoons pumpkin pie spice
  7. 1 teaspoon vanilla
  8. 1/2 teaspoon salt
Topping
  1. 1/2 cup whipped cream
  2. Honey to drizzle
Instructions
  1. Heat oven to 350°F. In medium bowl, mix all crust ingredients with fork until crumbly. Press in bottom of ungreased 13x9-inch pan. Bake 10 minutes.
  2. Meanwhile, in large bowl, beat all filling ingredients with wire whisk or electric mixer on medium speed until blended. Pour over partially baked crust.
  3. Bake 55 to 60 minutes or until set and knife inserted in center comes out clean. Cool completely, about 40 minutes.
  4. Top with whipped cream and drizzle with honey

Welcome to the DisneyMeals Halloween Special! This year we did Tim Burton’s Frankenweenie!  We’re huge dog lovers here in the DisneyMeals household, as well as Tim Burton fans. So this movie worked out well for us.

Double Dutch Cherry Muffins

So something cool about today’s recipes is that they actually show the recipes in the movie!


The recipe wasn’t perfect or very detailed, but I followed it as closely as possible. It turned out really well for the muffins. I even made a video for it!

Ingredients
  1. 1 C Sugar
  2. 2 C Flour
  3. 2 Eggs
  4. 1 tsp Soda
  5. ¾ c butter
  6. ½ c milk
  7. ½ c cherries
  8. ½ c double cream
Instructions
  1. Cut the cherries into small pieces
  2. Melt the Butter
  3. In a large bowl, mix the eggs, sugar, flour, soda and milk. Mix well.
  4. Pour the mixture into a muffin tray and bake for 30 minutes.
  5. Before serving decorate each muffin with a cherry and add some double cream on the top

Dutch Apple Pie

This recipe was shown in the film too.

Though…following the recipe straight up didn’t work as well as it did for the muffins.  They had you put 3 sliced apples on top of the cake. That made too much weight on top and dripped too much juice into the cake. It tasted amazing though. Just wasn’t very cake-ish. Someone needs to teach Tim Burton to cook.

Ingredients
  1. 2 Eggs
  2. 1 c flour
  3. 1 c milk
  4. 1 c white sugar
  5. ½ c brown sugar
  6. ½ c butter
  7. 3 cooking apples
  8. ½ c cream
  9. 1 tsp cinnamon
  10. 1 tsp baking soda
  11. ½ tsp vanilla extract
Instructions
  1. Whisk the eggs, sugar and vanilla extract until the mixture is thick and mousse-like.
  2. Melt the butter in a saucepan with the milk, then pour onto the eggs, whilst continually whisking.
  3. Sift in the flour, cinnamon, and baking soda
  4. Pour the mixture into a square baking tin.
  5. Arrange the apple slices over the top and bake for 20-25 minutes.
Notes
  1. If you are using a bread pan like me, bake for 45-50 minutes. I would also suggest just using 2 apples and layering the cake. Pour half batter, layer apples, pour the rest of the batter, layer other apples

Fondue and Popcorn

There isn’t really a recipe for this. We finally got to use our fondue pot that we got as a wedding gift. We filled it with oil and cooked shrimp, beef, sausage and asparagus in it (as shown in the movie). It was really good even though I burnt myself a few times.


We also cooked popcorn in our fancy movie-theater style popcorn maker. Yum!

All the food was great. I do have some ideas that could improve the recipes shown, but we wanted to make them as close as possible.

Cars 2 – Tacos and Lemons

Don’t worry, this will be a quick post, as to not spend much time on the worst Pixar movie ever made.  Granted, it isn’t a BAD movie, it’s just the worst Pixar movie. There isn’t much food shown, cuz well, cars don’t really eat food.

  1. 1 lbs ground beef
  2. 1 small onion
  3. 1 tbs chunky salsa
  4. 1 tsp taco seasoning
  5. 1 tsp parsley
  6. salt and pepper to taste
  7. 1 lemon
  8. Cheese
  9. Toppings (sour cream, lettuce, onion, tomato, etc)
  10. Hard taco shells
Instructions
  1. In a pan over a medium-high heat, cook the onions until they start to caramelize. Add the ground beef and brown. Add the salsa and other seasonings, cook for a couple more minutes.
  2. Place the meat in a taco shell and add desired toppings. Squeeze a bit of lemon juice on top

Tangled – Hazelnut Soup, Lemon & Raspberry Cupcakes

When Tangled came out, I saw it, I enjoyed it, but I never got on the Tangled-Obsession bandwagon. I only watched it once, and watching it again for Disney Meals was a real treat. I loved Tangled more than I remembered. I might be on the Tangled-Obsessed bandwagon now. There were a few good foods shown in the movie, however we made most of them.

Perhaps the most notable food in the movie is the Hazelnut soup Mother Gothel promises to make with parsnips. We never actually see the soup, but we decided to make it anyway.

Ingredients
  1. 2 lb butternut squash, seeded and cut into 6 sections
  2. 1 lb parsnips, peeled and roughly chopped
  3. 1 green apple, peeled, cored, and quartered
  4. 1 medium brown onion, thinly sliced
  5. 4 cups of chicken stock, divided
  6. 2 tablespoons olive oil, divided
  7. 1/2 cup heavy cream
  8. 1/2 teaspoon cumin
  9. 1 tsp lime juice
  10. 3-4 sprigs fresh thyme
  11. Salt and white pepper to taste
  12. 1 cup roasted hazelnuts
  13. Olive Oil
Instructions
  1. Preheat oven to 400F
  2. In a roasting pan, place the butternut squash, green apple and parsnips. Drizzle with olive oil and top with thyme. Add 1/4 cup water
  3. Bake for 45-50 minutes.
  4. While that is cooking, heat some olive oil in a pan and cook the onions until they are translucent.
  5. Remove the skin from the roasted squash once cooled
  6. Add the roasted veggies and onions into a large pot.
  7. Add the chicken stock, 1/2 of the hazelnuts and the rest of the ingredients, except the cream and blend with a wand blender (or in parts in a food processor)
  8. Bring to boil
  9. Let simmer for 10 minutes. Add the cream right before serving.

Lemon and Raspberry Cupcakes

When Rapunzel and Flynn are having fun in the city, they are shown eating yellow and pink cupcakes. I could just link to another cupcake recipe because we don’t really know what kind of cupcake it is. So I decided to make some Lemon-Raspberry cupcakes!

Ingredients
  1. 3 cups self-rising flour
  2. 1/2 teaspoon salt
  3. 1 cup unsalted butter, at room temperature
  4. 2 cups white sugar
  5. 4 eggs, at room temperature
  6. 1 teaspoon vanilla extract
  7. 2 tablespoons lemon zest
  8. 1 cup whole milk, divided
  9. 2 1/2 tablespoons fresh lemon juice, divided
  10. 1/4 cup fresh raspberries
Lemon Cream Icing
  1. 2 cups chilled heavy cream
  2. 3/4 cup confectioners' sugar
  3. 1 1/2 tablespoons fresh lemon juice
Raspberry Cream Icing
  1. 2 cups chilled heavy cream
  2. 3/4 cup confectioners' sugar
  3. 1 1/2 tablespoons raspberry puree
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line 30 cupcake pan cups with paper liners.
  3. Sift the self-rising flour and salt together in a bowl.
  4. In another bowl, beat the unsalted butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, beating each egg until incorporated before adding the next.
  5. Mix in the vanilla extract and lemon zest.
  6. Add the raspberries
  7. Gently beat the flour mixture into the butter mixture, one third at a time, alternating with half the milk and half the lemon juice after each of the first 2 additions of flour.
  8. Beat until just combined; do not over mix.
  9. Fill the prepared cupcake liners with batter 3/4 full, and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 17 minutes.
  10. Let the cupcakes cool in the pans for about 10 minutes before removing them to finish cooling on a rack.
Icing
  1. Beat the cream in a chilled bowl with an electric mixer set on Low until the cream begins to thicken. Add the confectioners' sugar and lemon juice (or raspberry puree), a little at a time, beating after each addition, until fully incorporated. Increase the mixer speed to High, and beat until the icing forms soft peaks, about 5 minutes. Spread on the cooled cupcakes.

Toy Story 3 – Mr. Tortilla Head, and Jelly Bean Burger

We’re back and in a new place! The new kitchen is so much bigger and nicer than our old kitchen! What a better way to break in the new kitchen than with food from Toy Story 3! There wasn’t much food to make, but it was a good ease in. Let me tell you, it is a lot easier to make tortillas when you have lots of counter space. I think I might be allergic to the last part of Toy Story 3. My eyes start to swell and I discharge fluids from my eyes and nose. My throat tightens and it makes it hard to breath. Luckily it passes as the credits roll.
On the same note, the beginning of Up elicits the same reaction. As well as the end of the 1st act of the Lion King…..

Part of the toys’ escape plan was to have Mr. Potato Head assume the body of a tortilla!

I always thought that was pretty creepy. But we haven’t made tortillas yet, so here’s the recipe!

Ingredients
  1. 4 cups Flour
  2. 2 tsp salt
  3. 2 tsp baking powder
  4. 2 tbs lard
  5. 1.5 cups water
Instructions
  1. Mix the flour, salt and baking powder
  2. Add the lard and mix with your hands until incorporated
  3. Mix while adding water slowly. Mix until dough is smooth.
  4. Split the dough up into 18-24 balls (depending on how big you want the tortillas
  5. Flatten the dough on a slightly floured surface.
  6. Over a hot stove, place the flattened dough and cook for 1-2 min each side
  7. Decorate with Mr Potato Head pieces

Jelly Bean Burger

So this isn’t a recipe per se. It wasn’t a real burger, but the plastic burger that Bonnie was playing with.

I tried a real burger with jelly beans on it. It tasted exactly as you thought it would. Like a burger with jelly beans on it.

Princess and the Frog [Week 2] – Neapolitan Mousse, Strawberry Mousse with Chocolate Ganache, Chocolate Horn Pastry, and Swamp Gumbo

Neapolitan Mousse

So there are a lot of mousses shown on the table in Tiana’s fantasy restaurant song. 

They’re pretty much all just iterations of the same mousses though, so I made a 3 different mousses. White Chocolate, Chocolate, and Strawberry. And actually, the mousses fit into the other recipes on the blog today. So for this Neapolitan mousse, here’s the recipe for the White Chocolate. The next recipe will feature the Strawberry Mousse and the Chocolate Horn Pastry will feature the Chocolate Mousse. Just make all three of those and layer them for the Neapolitan Mousse.

White Chocolate Mousse (for Neapolitan Mousse)

Ingredients
  1. 7 ounces white chocolate, chopped into very small pieces
  2. 2 egg yolks
  3. 2 tablespoons sugar
  4. 1/4 cup heavy cream, plus 1 cup
Instructions
  1. In a large glass bowl, place the chopped white chocolate and set aside.
  2. Add the egg yolks and sugar to a small bowl and whisk until pale in color.
  3. In a saucepan, over low heat, bring 1/4 cup of the cream to a simmer, and slowly add the cream into the yolk and sugar mixture to temper. Pour the creamy mixture back into pan and stir with a wooden spoon until it coats the back of it.
  4. Pour hot mix into a fine mesh sieve placed directly over bowl with the chopped chocolate. Stir until completely smooth.
  5. In another bowl, whip remaining 1 cup of the cream to almost stiff peaks. Fold half the whipped cream into the white chocolate mix to lighten and then fold in the remaining whipped cream.
  6. Spoon the white chocolate mousse into 4 serving cups and refrigerate until set, approximately 1 hour.

Dome Strawberry Mousse with Chocolate Ganache

That dome looks like a strawberry mousse on a graham cracker crust and a chocolate ganache.

Mousse
  1. 5 Cups fresh strawberries, hulled and quartered
  2. 1/3 Cup sugar
  3. 1/2 tsp. fresh lemon juice
  4. 2 Tbsp. water
  5. 2 tsp. unflavored gelatin powder
  6. 3/4 Cup heavy cream
Ganache
  1. 1 cup heavy cream
  2. 3/4 cup cocoa powder, sifted
  3. 1/4 cup granulated sugar
  4. 1/2 teaspoon vanilla
  5. Prepared Graham Cracker Crust
Mousse
  1. In a small saucepan over very low heat, cook the berries, sugar, lemon juice, and water until very liquid, about 30 minutes.
  2. Strain the mixture through a sieve and let cool completely.
  3. You should have about 1 1/4 Cups of strawberry juice.
  4. Pour 3/4 cup of the juice into a small bowl and sprinkle the gelatin over the surface to soften.
  5. Reheat the remaining juice until it is warm to the touch.
  6. Add the softened gelatin mixture to the warm juice and whisk until the gelatin has completely dissolved.
  7. In a stand mixer with the whisk attachment, whip the cream until it holds medium peaks.
  8. Fold one-third of it into the strawberry mixture.
  9. Gently fold in the remainder until no streaks remain.
  10. Pour mousse into a dome mold (or bowl)
  11. Let set in fridge for 2+ hours and then freezer for 4+hours
Ganache
  1. In a saucepan, heat the cream, stirring frequently to discourage scorching, until it begins to simmer and seems like it might start boiling any moment (but don't let it boil).
  2. Remove from heat and whisk in the remaining ingredients until smooth. Let the mixture cool to your desired thickness. It will never become hard, per se, but it will set to a smooth, spreadable consistency.
  3. Cut the prepared graham cracker crust into a circular shape the size of the mousse mold.
  4. Run the outside of the mousse mold under warm water for a few seconds, the mousse should slide out easily on top of the crust.
  5. Cover with ganache
  6. Top with a cherry

Chocolate Horn Pastry

This is some kind of cone pastry with chocolate inside. This is what we’re using the chocolate mousse for! A perfect filling for a cone pastry.

Ingredients
  1. 2 cups chilled heavy cream
  2. 4 large egg yolks
  3. 3 tablespoons sugar
  4. 1 teaspoon vanilla
  5. 7 oz fine-quality bittersweet chocolate (not unsweetened), chopped
  6. Puff Pastry Sheet
Instructions
  1. Heat 3/4 cup cream in a 1-quart heavy saucepan until hot. Whisk together yolks, sugar, and a pinch of salt in a metal bowl until combined well, then add hot cream in a slow stream, whisking until combined. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly, until it registers 160°F on thermometer. Pour custard through a fine-mesh sieve into a bowl and stir in vanilla.
  2. Melt chocolate in a double boiler or a metal bowl set over a pan of simmering water (or in a glass bowl in a microwave at 50 percent power 3 to 5 minutes), stirring frequently. Whisk custard into chocolate until smooth, then cool.
  3. Beat remaining 1 1/4 cups cream in a bowl with an electric mixer until it just holds stiff peaks. Whisk one fourth of cream into chocolate custard to lighten, then fold in remaining cream gently but thoroughly.
  4. Spoon mousse into 8 (6-ounce) stemmed glasses or ramekins and chill, covered, at least 6 hours.
Horn
  1. Preheat oven to 400ºF
  2. Roll tin foil around an ice cream cone, another oven-safe conicle object or create one with the tin foil.
  3. Spray cooking spray on the tinfoil cone
  4. Roll the puff pastry dough around the cone
  5. Place on a greased baking sheet and cook for 20 minutes or until golden brown
  6. Fill the cone with chocolate mousse, drizzle some chocolate syrup on top and top with whipped cream

Tiana’s Swamp Gumbo

The swamp gumbo was really fun to make. I couldn’t find a pumpkin at this time of year, but I did find an acorn squash, which looks and tastes very similar. The same principles would apply to cooking in a pumpkin. I tried to find veggies that you would find around New Orleans and cook it as close to how she would. I think it turned out pretty well. Make sure to mince up your veggies!

Ingredients
  1. 1/4 c butter
  2. 1/4 c flour
  3. 2 baby portabella mushrooms (minced)
  4. 1 stalk celery (minced)
  5. 1/4 cup green beans (minced)
  6. 4 oz okra (diced)
  7. 2 tomatoes (diced)
  8. 2 cup water
  9. 1 pumpkin (or 2 acorn squash)
  10. 1 bay leaf
  11. cajun spices
  12. salt and to taste
Instructions
  1. Preheat oven to 350ºF
  2. In a pan, melt the butter
  3. Add the flour and create a nice smooth roux
  4. Add in the mushrooms and saute for a bit
  5. Add the okra, then celery, then green bean one at a time
  6. Cook for 10 minutes over medium heat
  7. Add water and tomato and mix well
  8. Cut off the top of the pumpkin and clean out
  9. Add the veggie mixture
  10. add the bay leaf
  11. Place the top of the pumpkin back on
  12. Place in oven (on a baking sheet) and bake for 45m - 1hr
  13. Eat straight out of the pumpkin!

Will it turn you into a Prince?

I really really liked the mousse. The white chocolate was probably my favorite, followed close behind by the strawberry. But they were all almost equally good. The swamp gumbo wasn’t as good as the gumbo of last week, but it was still really good and vegetarian!

Verdict:
