I love love love Inside Out. It is probably the Disney/Pixar movie with the heaviest themes. It has so many layers. It has some fun foods in it, like broccoli pizza!

Imagination Land Cupcakes

In the butchered dream sequence, the dream is failing and the camera pans around to see the Unicorn eating cupcakes.

Ok, we’ve done cake and cupcakes a lot. Normally we would have just linked to another recipe, but we had some friends come over for a baking night and we had to make some yummy treats, so my wife found this great recipe with some really good frosting.

Cupcakes
  1. 1 1/4 cups (296 ml.) vegetable oil
  2. 1 3/4 cups (373 g.) white granulated sugar
  3. 4 eggs
  4. 1 Tablespoon pure vanilla extract
  5. 1 1/2 tsp. pure almond extract
  6. 2 1/4 cups (340 g.) all purpose flour
  7. 1/2 cup (68 g.) cornstarch
  8. 1 Tablespoon baking powder
  9. 1 tsp. salt
  10. 1 1/2 cups (366 g.) full fat sour cream OR full fat yogurt or full fat Greek yogurt
Frosting
  1. 1 1/2 cups (322 g.) white granulated sugar
  2. 3/4 cups (113 g.) all purpose flour
  3. 1/4 tsp. salt
  4. 2 1/4 cups (532 ml.) whole milk
  5. 1 1/2 cups (3 sticks) (339 g.) unsalted butter at room temperature
  6. 1 to 1 1/2 Tablespoons pure vanilla extract (depending on your taste) or 1 Tablespoon vanilla and 1/2 tsp almond extract
Instructions
  1. Preheat oven to 350 degrees Fahrenheit, 180 degrees Celsius, Gas Mark 4. Put oven rack on the bottom third of the oven. In my oven I bake these in the second rack from the bottom. (I found that with this recipe when the cupcakes were baked in the upper racks they got too brown for my liking.)
  2. Start by making the base for the frosting. (It needs to cool down before using, this part of the frosting could also be made a day or 2 ahead.) In a large saucepan on medium heat, whisk together the sugar, flour and salt, and slowly add the milk. Cook, whisking frequently, really almost constantly so it doesn't scorch, until it comes to a boil. Once it starts boiling, turn down the heat to medium low, and cook for 3-4 minutes, whisking constantly, this is to cook the flour taste out. Mixture will be very thick. Remove from heat and add 1 tablespoon vanilla extract. Transfer this mixture to another bowl and let cool in the fridge.
  3. Start making the cupcakes.
  4. Line muffin tins with cupcake liners (greaseproof are best) and set aside.
  5. In a large bowl with a hand mixer, or in the bowl of a stand mixer, add the oil and the sugar. Beat them together for 2 minutes or so, so they are mixed well and the sugar has dissolved somewhat. Add the eggs and both extracts and beat again for another 2 or 3 minutes, until the mixture is smooth and creamy looking.
  6. In another medium bowl, whisk together the flour, cornstarch, baking powder and salt. Add the dry ingredients to the egg mixture and beat on medium low speed just until it's incorporated, don't over beat. Scrape down the sides of the bowl with a rubber spatula. Add the sour cream and beat on medium low speed just until the sour cream is mixed in well. Scrape down the sides of the bowl again and beat again just for about 20 seconds to make sure it's all mixed well.
  7. With a spoon or a scoop, fill the cupcake liners slightly over half full. Bake in the preheated oven for 18-22 minutes, until a toothpick inserted into the center comes out clean. (Start checking after 17 minutes.)
  8. Cool on a wire rack. When they have cooled enough to handle, remove from muffin tins and let cool on racks. Let cool completely before frosting cupcakes.
  9. While cupcakes are baking finish making the frosting. Make sure the base in the fridge is completely cool. If it's warm at all, it's going to melt the butter. If it's very cold in the fridge it may very firm. Don't worry, it's fine.
  10. In a stand mixer or in a large bowl with a hand mixer, beat the butter for 2 minutes, scrape down the sides of the bowl and beat again for another minute or so, until it's nice and light and fluffy. With the mixer going on medium - medium high, gradually add the cooled frosting base, about a "scoop" (a large spoonful) at a time. After each scoop, let it mix until it's fully incorporated. Keep adding and letting it mix together until it's all been used. Scrape down the sides of the bowl and beat for another few minutes until it's super light and fluffy. Taste it and see if you think it needs a little more vanilla extract, or you can add another extract or flavoring at this time.
  11. Frost cupcakes. Refrigerate any leftover frosting. If you aren't serving these right away, keep them refrigerated but let them come to room temperature before serving. If you have refrigerated the frosting, you'll need to beat it again before using. The good thing about this frosting is that it doesn't totally harden in the fridge like a typical buttercream does, (since butter solidifies when cold.)

Ingredients
  1. 1 small head cauliflower, chopped (5 to 6 cups)
  2. 1 cup grated Parmesan
  3. 1/2 teaspoon dried Italian seasoning
  4. 1 clove garlic, minced
  5. 1/2 teaspoon kosher salt
  6. Freshly ground black pepper
  7. 1 egg
  8. 1 1/2 cups shredded low-moisture mozzarella
  9. 1/2 cup marinara sauce
  10. Broccoli to top
Instructions
  1. Place a pizza stone or rimless baking sheet in the oven; preheat to 475 degrees F.
  2. Add the cauliflower to a food processor; pulse until finely ground, about the consistency of couscous. Pour the cauliflower onto a clean kitchen towel (I like flour sack towels for this) and squeeze out as much liquid as possible.
  3. To a large bowl, add the cauliflower, Parmesan, Italian seasoning, garlic, salt, some black pepper and the egg. Mix until the mixture holds together when pinched.
  4. Line a pizza peel or a second rimless baking sheet with parchment paper; liberally brush with olive oil. Spread the cauliflower mixture into a 12-inch-wide circle on the parchment. Slide the parchment onto the preheated pizza stone or baking sheet. Bake until the cauliflower crust is barely golden and darker at the edges, about 15 minutes.
  5. Remove the crust from the oven, sprinkle with the mozzarella and spread the marinara sauce over the top (this keeps the crust dry), then add broccoli on top. Slide the pizza back onto the pizza stone or baking sheet and bake until bubbly and browned in spots, about 4 minutes.

  1. 3 tablespoons cornstarch, divided
  2. 1⁄2 cup water, plus
  3. 2 tablespoons water, divided
  4. 1⁄2 teaspoon minced garlic
  5. 1⁄2 teaspoon oyster sauce
  6. 1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
  7. 2 tablespoons vegetable oil, divided
  8. 4 cups broccoli florets
  9. 1 small onion, cut into wedges
  10. 1⁄3 cup reduced sodium soy sauce
  11. 2 tablespoons brown sugar
  12. 1 teaspoon ground ginger
Instructions
  1. In a bowl, combine 2 tablespoons cornstarch, oyster sauce, 2 tablespoons water and garlic until smooth.
  2. Add beef and toss.
  3. In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef is done; remove and keep warm.
  4. Stir-fry broccoli and onion in remaining oil for 4-5 minutes.
  5. Return beef to pan.
  6. Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan.
  7. Cook and stir for 2 minutes.
  8. Serve over rice.

You should definitely eat your broccoli. I didn’t have high hopes for the broccoli pizza, but it wasn’t bad. I don’t think San Francisco ruined it THAT much.

Big Hero 6 – Ramen, Muffins, Hot Wings, Nigiri

When I first saw Big Hero 6, I came out of it and said, “If I were 10 years old, that movie would be my favorite movie of all time times infinity.” I absolutely love Big Hero 6. Watching it again made me love it even more. It has to be in my top 10 favorite Disney movies of all time. One of my favorite things about it is the setting, San Fransokyo.  I was excited to make some yummy Japanese foods. I was going to make some mochi, but I couldn’t get Azuki beans in time. I might make a special one-off post just for that though.

I have always wanted to make Ramen that wasn’t instant. Sadly, I didn’t do too well. I had to substitute some ingredients, and I must have not done well. Here’s the recipe in its unsubstituted form. Try it, see if you like it better.

Ingredients
  1. 4 eggs
  2. 10 oz (285 g) ramen noodles
  3. 1/2 cup (200 g) fresh or canned bamboo shoots, sliced
  4. 1/2 cup (170 g) fresh or canned corn kernels, drained
  5. 1/3 cup (80 g) defrosted frozen or fresh spinach
  6. 8 cups (2 liters) pork or vegetable broth
  7. 2 teaspoons instant dashi granules
  8. 1 tablespoon soy sauce, or to taste
  9. 4 tablespoons fresh miso paste
  10. 1 cup (100 g) fresh bean sprouts
  11. 1 stalk green onion (scallions), finely chopped
  12. 4 teaspoons chili oil (optional)
Instructions
  1. Place the whole, un-cracked eggs in a medium pot and fill with water to cover eggs by 1 inch (2.5 cm).
  2. Turn the heat to high and when boiling, turn the heat off and let the eggs sit in the hot water for 10 minutes.
  3. Promptly use a slotted spoon to remove the eggs and peel the egg under cold running water. Slice each egg in half.
  4. Return the same pot of water to a boil.
  5. Add the ramen noodles and cook according to package instructions (most ramen noodles only take 3 minutes to cook.) Drain and rinse with cold water to stop the cooking.
  6. Divide the noodles, hardboiled eggs, bamboo shoots, corn and spinach among 4 large serving bowls.
  7. In a large pot, add the stock, instant dashi and soy sauce.
  8. Bring to a boil over high heat.
  9. Remove from the heat and stir in the miso.
  10. Taste the soup and add an additional 1 to 2 tablespoons of miso if you’d like.
  11. Ladle soup into each bowl.
  12. Top each bowl with fresh bean sprouts, green onions and a drizzle of chili oil, if desired.

Ingredients
  1. ½ cup softened butter
  2. 1 ¼ cups sugar
  3. 2 eggs
  4. 1 teaspoon vanilla extract
  5. 2 cups flour
  6. ½ teaspoon salt
  7. 2 teaspoons baking powder
  8. 1 tbs orange juice
  9. ½ cup milk
  10. 2 cups blueberries, washed, drained and picked over
  11. 3 teaspoons sugar
Instructions
  1. Preheat the oven to 375.
  2. Cream the butter and 1 1/4 cups sugar until light.
  3. Add the eggs, one at a time, beating well after each addition. Add vanilla.
  4. Sift together the flour, salt and baking powder, and add to the creamed mixture alternately with the milk.
  5. Add orange juice
  6. Crush 1/2 cup blueberries with a fork, and mix into the batter. Fold in the remaining whole berries.
  7. Line a 12 cup standard muffin tin with cupcake liners, and fill with batter. Sprinkle the 3 teaspoons sugar over the tops of the muffins, and bake at 375 degrees for about 30-35 minutes.
  8. Remove muffins from tin and cool at least 30 minutes.

Hot Wings That’ll Melt Your Face Off

After Hiro and Baymax first encounter the masked man, they come back and Cass is making Hiro hot wings, that she promises he’ll feel in the morning.

Ingredients
  1. 20 whole chicken wings, washed well and patted dry
  2. 1 cup all-purpose flour
  3. 1 teaspoon salt
  4. 1 teaspoon freshly ground pepper
  5. 1 teaspoon cayenne pepper
Sauce
  1. 1 cup hot sauce
  2. 1 cup (2 sticks) melted butter, at room temperature
  3. 1 teaspoon freshly squeezed lemon juice
  4. 1 tsp honey
  5. 2 teaspoons dried basil leaves
  6. Blue Cheese sauce for dipping
Instructions
  1. Place chicken wings into a large, zip-top plastic bag or large brown paper bag.
  2. In a small bowl, combine the flour, salt, pepper, and cayenne.
  3. Add the seasoned flour to the plastic bag and toss to coat well.
  4. Pour the chicken pieces and excess flour onto a baking sheet and spread evenly.
  5. Allow the chicken to sit on the floured baking sheet to dry out for about 1 hour.
  6. Preheat fryer or a large stockpot filled halfway with vegetable oil to 350 degrees F.
  7. Add chicken to hot oil and fry until cooked through and crispy, about 10 to 13 minutes.
  8. Mix all the ingredients of the sauce together
  9. Place the wings in a large bowl and drizzle with half of the sauce.
  10. Toss to coat well. Serve hot with the remaining sauce and blue cheese.

Lucky Cat Nigiri

When Hiro upgrades Baymax and flies through the city, they pass a restaurant with a cat holding a piece of nigiri.

We have made sushi before, but not nigiri. I don’t enjoy nigiri as much, but it is simple and still yummy.

Ingredients
  1. 2 1/3 cup short-grain sushi rice, rinsed
  2. 3 cups water
  3. 5 1/3 tablespoons rice vinegar
  4. 5 tablespoons sugar
  5. 1.5 tablespoons salt
  6. 1 (6 ounce) piece salmon
Instructions
  1. Prepare fish first. Cover fish with salt and leave for 1 hour. Then, rinse off salt and put it into the freezer. Once frozen, defrost and use for sushi.
  2. Wash the rice until the water rinses clear.
  3. Drain the rice in a colander and let it stand for 30 minutes.
  4. Place the rice in a pot or rice cooker, and add 3 cups of water or follow the instructions on a rice cooker.
  5. Remove the cover, place a damp towel over the rice, and let cool for 10 minutes.
  6. You can find sushi vinegar prepared at a grocery story or you can easily make it by pouring the vinegar, sugar and salt into a pan under low heat until the sugar and salt are dissolved.
  7. Pour sushi vinegar over cooked rice and mix it gently. You can do this in a wooden bowl for making sushi rice or in your rice cooker by turning off the cooker and pouring the vinegar and mixing gently and evenly and leaving it until it cools down to room temperature.
  8. Slice the fish very thinly into bite-sized pieces.
  9. Hand-mold fingers of rice and place a thin slices of fish on the top.
  10. Eat with soy sauce and wasabi
