Aladdin [Part 2/2] – Cheesecake, Ful, Chicken Ala King, Alaskan King Crab, Caesar Salad, Kabobs, Persian Rolls

You’ll never have a meal like this. This is week 2/2 of Aladdin. This will cover some of Friend like Me and the rest of the movie.

We have some more great Arabic food and also some non-arabic food brought to you by the genie. 

 

Cheesecake

There are a few different foods, on this. Some chicken, which you can see the recipe in our previous post. Theres also a pineapple, a celery, a mellon, some rolls (which are addressed later in this post), some mush (which is covered next) and some cheesecake. I love cheesecake, so I was happy to jump in on this recipe

Crust
  1. 2 cups (475 ml) of Graham cracker crumbs (from a little less than 2 packages Graham crackers
  2. 2 Tbsp sugar
  3. Pinch salt
  4. 5 Tbsp (70 g) unsalted butter (if using salted butter, omit the pinch of salt), melted
Filling
  1. 2 pounds cream cheese (900 g), room temperature
  2. 1 1/3 cup granulated sugar (270 g)
  3. Pinch of salt
  4. 2 teaspoons vanilla
  5. 4 large eggs
  6. 2/3 cup sour cream (160 ml)
  7. 2/3 cup heavy whipping cream (160 ml)
Toppings
  1. 2 cups sour cream (475 ml)
  2. 1/3 cup powdered sugar (35 g)
  3. 1 teaspoon vanilla
  4. 12 ounces (340 g) fresh raspberries
  5. 1/2 cup granulated sugar (100 g)
  6. 1/2 cup water (120 ml)
Special equipment needed
  1. 9-inch, 2 3/4-inch high springform pan
  2. Heavy-duty, 18-inch wide aluminum foil
  3. A large, high-sided roasting pan
Instructions
  1. Prepare the springform pan so that no water leaks into it while cooking.
  2. Place a large 18-inch by 18-inch square of heavy duty aluminum foil on a flat surface.
  3. Place the springform pan in the middle of the foil.
  4. Gently fold up the sides of the foil around the pan.
  5. Make sure to do this gently so that you don't create any holes in the foil.
  6. If there are any holes, water will get into the pan and ruin the crust.
  7. Press the foil around the edges of the pan.
  8. Place a second large square of foil underneath the pan, and repeat, gently folding up the sides of the foil around the pan and pressing the foil against the pan.
  9. To be triply safe, repeat with a third layer of heavy duty foil.
  10. Gently crimp the top of the foil sheets around the top edge of the pan.
  11. Preheat oven to 350°F, with rack in lower third of oven.
  12. Pulse the graham crackers in a food processor or blender until finely ground. (Or use pre-crushed graham cracker crumbs)
  13. Put in a large bowl, and stir in the sugar and salt.
  14. Use your (clean) hands to stir in the melted butter.
  15. Put all but 1/4 cup of the graham cracker crumbs in the bottom of the springform pan. (Save the remaining 1/4 cup for if you happen to have any holes that need to be filled in, either while you are making the crust, or after the cake has cooked and you've unmolded it.)
  16. Gently press down on the crumbs using your fingers, until the crumbs are a nice even layer at the bottom of the pan, with maybe just a slight rise along the inside edges of the pan.
  17. Be careful as you do this, as not to tear the aluminum foil.
  18. Place in the oven for 10 minutes.
  19. Remove from the oven and let cool. Reduce the oven temperature to 325°F.
Make the filling
  1. Cut the cream cheese into chunks and place in the bowl of an electric mixer, with the paddle attachment. (We softened the cream cheese in the microwave at a low setting, stirring every 45 seconds)
  2. Mix on medium speed for 4 minutes until smooth, soft and creamy.
  3. Add the sugar, beat for 4 minutes more.
  4. Add the salt and vanilla, beating after each addition.
  5. Add the eggs, one at a time, beating for one minute after each addition.
  6. Add the sour cream, beat until incorporated.
  7. Add the heavy cream, beat until incorporated.
  8. Remember to scrape down the sides of the mixer bowl, and scrape up any thicker bits of cream cheese that have stuck to the bottom of the mixer that paddle attachment has failed to incorporate.
Cook the cheesecake
  1. Place the foil-wrapped springform pan in a large, high-sided roasting pan. (We didn't have a pan that big so we used a cookie sheet and a lot of aluminum foil to make walls)
  2. Prepare 2 quarts of boiling water.
  3. Pour the cream cheese filling into the springform pan, over the graham cracker bottom layer.
  4. Smooth the top with a rubber spatula.
  5. Place the roasting pan with the springform pan in it, in the oven, on the lower rack.
  6. Carefully pour the hot water into the roasting pan (without touching the hot oven), to create a water bath for the cheesecake, pouring until the water reaches halfway up the side of the springform pan, about 1 1/4 inches. (Alternatively you can add the water before putting the pan in the oven, whichever is easier for you.)
  7. Cook at 325°F for 1 1/2 hours.
  8. Turn off the heat of the oven.
  9. Crack open the oven door 1-inch, and let the cake cool in the oven, as the oven cools, for another hour.
  10. This gentle cooling will help prevent the cheesecake surface from cracking.
  11. Cover the top of the cheesecake with foil, so that it doesn't actually touch the cheesecake.
  12. Chill in the refrigerator for a minimum of 4 hours, or overnight.
Prepare sour cream topping
  1. Place sour cream in a medium sized bowl, stir in the powdered sugar and vanilla, until smooth.
  2. Chill until you are ready to serve the cake.
  3. Note that this recipe produces enough sour cream topping for a thick topping and some extra to spoon over individual pieces of cheesecake, if desired. If you would like a thinner layer of topping and no extra, reduce the sour cream topping ingredients in half.
Prepare the raspberry sauce
  1. Place raspberries, sugar, and water in a small saucepan.
  2. Use a potato masher to mash the raspberries.
  3. Heat on medium, whisking, about 5 minutes, until the sauce begins to thicken.
  4. Remove from heat. Let cool.
Prepare the cake to serve
  1. Remove the cake from the refrigerator.
  2. Remove the foil from the sides of the pan, and place the cake on your cake serving dish.
  3. Run the side of a blunt knife between the edge of the cake and the pan.
  4. You can use a hair dryer to heat the sides of the pan to make it easier to remove.
  5. Open the springform latch and gently open the pan and lift up the sides.
  6. Spread the top with the sour cream mixture.
  7. Serve plain or drizzled with raspberry sauce.

On that picture, you see some brown mush behind Aladdin. It probably wasn’t meant to be any food. But I looked online for some Persian/Arabic food that looked similar. I found a breakfast food called Ful. Our recipe turned out whiter than it should have because we used lima beans. We couldn’t find Fava beans.

Ingredients
  1. 1 can fava (or lima) beans, drained, liquid reserved
  2. 1/4 c. onion, finely minced
  3. 2 cl. garlic, minced
  4. 2 – 4 (depending on size and heat level) tabasco or pepperoncini peppers, minced
  5. 1/4 c. parsley, minced
  6. Salt and pepper to taste
  7. Lemon to taste
  8. Olive oil
  9. additional minced parsley for garnish, optional
Instructions
  1. In a small saucepan over medium-low heat, mix together the fava beans, onion, garlic, peppers, about 2 – 3 tablespoons of the reserved liquid from the beans, and a pinch of salt & pepper.
  2. Heat the mixture slowly, stirring occasionally.
  3. Cook about 20 minutes.
  4. Add more liquid if the beans become too dry.
  5. Once the mixture is cooked, taste it for seasoning and some lemon to taste.
  6. Remove the saucepan from the heat and mash the beans, leaving some texture.
  7. Place the ful on a plate, drizzle over some olive oil and additional parsley.

Chicken ala King

The next three recipes come from Genie’s own cookbook when he’s trying to find the recipe to make Aladdin a prince.

Ingredients
  1. 1 (4.5 ounce) can mushrooms, drained, liquid reserved
  2. 1 green bell pepper, chopped
  3. 1/2 cup butter
  4. 1/2 cup all-purpose flour
  5. 1 teaspoon salt
  6. 1/4 teaspoon ground black pepper
  7. 1 1/2 teaspoons chicken bouillon powder
  8. 1 1/2 cups milk
  9. 1 1/4 cups hot water
  10. 4 boneless chicken breast halves, chopped
  11. 4 ounces chopped pimento
Instructions
  1. Heat oil in a large pan. Cook the chicken until fully cooked. Set aside.
  2. Drain the pan and melt butter in the pan.
  3. Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat.
  4. Blend in flour, salt, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly. Remove from heat.
  5. Stir in instant bouillon, milk, water, and reserved mushroom liquid. Heat to boiling, stirring constantly. Boil and stir for 1 minute.
  6. Stir in chicken and pimiento. Heat through.

Sabastian King Crab

We had a previous (bad) experience with crab when we were making food from the Little Mermaid. So we decided to go the easy route this time and just get frozen king crab legs.

Ingredients
  1. lbs king crab legs
  2. 1⁄2 cup butter (salted or unsalted)
  3. 1⁄2 head garlic, about 5 garlic cloves, minced pressed
  4. 1⁄2 lemon, juice of
  5. 1⁄2lime, juice of
  6. 1⁄8 cup extra virgin olive oil
  7. sea salt (optional)
  8. dried parsley (optional)
Instructions
  1. Preheat your oven to 375 degrees.
  2. On med low heat, melt the butter in a small saucepan. Add the garlic and LIGHTLY saute.
  3. Squeeze in the juice of the citrus of choice.
  4. Turn the heat to low and let those flavors mesh until the oven is nice and hot.
  5. Toss in as much salt (to taste) and a couple pinches of parsley.
  6. Then whisk in that olive oil with a fork. Remove from heat.
  7. Arrange your tasty crustaceans in a 9x13 baking dish, brushing each leg with the sauce.
  8. Pour any remaining sauce over the legs.
  9. Now toss the pan into the oven on the center rack.
  10. Bake your crabs for about 25 minutes or so (depending on how thick the legs you have are), brushing the sauce from the bottom of the pan onto the legs every 5-7 minutes.
  11. Remove from oven.
  12. Sprinkle with a few pinches o' parsley for garnish.

Et Tu Brute Caesar Salad

I never go the joke that went along with this recipe until recently. The hand comes out of the book.

And Genie says “Et Tu Brute?” referring to Shakespeare’s Julius Caesar. 

Caesar Salad is actually really easy. I don’t have a specific recipe, but a caesar salad consists of romaine lettuce, parmesan cheese, croutons, boiled egg, Worcestershire sauce, lemon juice, garlic, olive oil, and black pepper. You can add or subtract ingredients as you like.

Prince Ali Kabobs

For the meat
  1. 1 teaspoon ground saffron dissolved in 2 tablespoons hot water
  2. 1 cup fresh lime juice
  3. 2 tablespoons olive oil
  4. 2 large onions, peeled and thinly sliced
  5. 2 cloves garlic, peeled, and crushed
  6. 2 tablespoons zest of orange
  7. 2 tablespoons yogurt
  8. 2 teaspoons salt
  9. 2 teaspoons freshly ground black pepper
  10. 1.5 lbs chicken (diced into 1.5 in pieces)
  11. 1.5 lbs lamb or beef (diced into 1.5 in pieces)(if using beef find the tenderest cut possible)
  12. 5 medium tomatoes, halved
  13. 3 Green bell peppers
  14. 6 flat, swordlike skewers
For the baste
  1. Juice of 1 lime
  2. 1/4 cup butter, melted
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon freshly ground black pepper
For the meat
  1. In a large bowl, combine half the saffron water and the lime juice, olive oil, onions, garlic, orange zest, yogurt, salt, and pepper.
  2. Beat well with a fork.
  3. Add the pieces of meat and toss well with marinade. Cover and marinate for at least 8 hours and up to 2 days in the refrigerator.
  4. Turn the meat twice during this period.
  5. Start a bed of charcoal 30 minutes before you want to cook and let it burn until the coals glow evenly. Or preheat an oven to 450F
  6. Skewer the meats and veggies in an alternating pattern (use the tomatoes, chopped bell peppers and the onions that were in the marinade)
For the baste
  1. Add the juice of 1 lime and the remaining saffron water to the melted butter. Add 1/2 teaspoon salt and 1/2 teaspoon pepper. Mix well and set aside.
  2. Paint the tomato and chicken with the basting mixture.
  3. Grill the meat and tomatoes 8 to 15 minutes, until done. Turn frequently and baste occasionally.
  4. If using the oven, place skewers on a cookie sheet.
  5. Cook for 10 minutes, turn the skewers over and cook for 10-15 minutes more.

Persian Rolls

There are actually rolls shown a few times throughout the movie, I’m just lumping it all into one recipe. This is based on a Persian flat bread. They are the best rolls I have ever made. They were insanely delicious.

Ingredients
  1. 7 g fast action dried yeast
  2. 700 g strong white bread flour
  3. 2 heaped tbsp Maldon sea salt, crushed
  4. 75 ml olive oil
  5. 50 g salted butter
Instructions
  1. Dissolve the yeast in 50ml warm water, stir vigorously and then leave it to sit for a few minutes until fully dissolved.
  2. In a large mixing bowl, combine the flour and salt and then make a well in the centre.
  3. Pour in 450ml water, 50ml olive oil and the yeast and water mixture.
  4. Combine using your hands until a smooth dough is formed.
  5. If the dough is a bit too sticky, just add a little extra flour and if it is dry, add a splash of water.
  6. On a clean floured surface, need the dough for 5 minutes to activate the yeast and stretch the gluten in the dough.
  7. Allow the dough to rest for 10 minutes before kneading it again for 2 minutes.
  8. Repeat this process another 3 times and on the second kneading, incorporate the remaining 25ml olive oil.
  9. Once the bread has been kneaded 3 times, return the dough into the mixing bowl, covering it with a dry tea towel and allowing it to rest somewhere warm for 3 hours.
  10. Once the resting period is over, the dough will have tripled in size.
  11. Elongate the dough ball gently by stretching it from both ends and then using a knife, cut the dough into half.
  12. Form the dough into a roll shape.
  13. Repeat this with the other half of the dough and place each one onto an oven tray lined with baking paper and using a sharp knife or pizza cutter, make 2 long lengthways incision in the centre of the dough, just 2-3 inches away from each end.
  14. Finally cover each oven tray with clean tea towels and allow them to rise for a further 30 minutes.
  15. Preheat the oven to 220C fan/gas 6.
  16. Once the loaves have risen again, brush with melted butter.
  17. Bake each loaf in the oven for 16-18 minutes, until golden brown.
  18. The best way to check if they are cooked through is to tap the bottom of the loaf, if it sounds hollow it is cooked.
  19. Allow the bread to cool down for at least 30 minutes before serving.

All the food was really good. Aladdin as a whole had some amazing food. It is one of my favorite movies as a whole.

French Fries in Agrabah? 

The shop keeper at the beginning of the movie (who might secretly actually be the genie. Look it up) tries to sell us a all-in-one coffee maker and french fry maker.

I tried my hand at making some french fries. They turned out really good. My only wish was that they came out a bit crispier.

Ingredients
  1. 5 pounds russet potatoes
  2. Vegetable or peanut oil, for frying
  3. Sea salt
  4. Celery Salt
Instructions
  1. Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  2. Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  3. When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  4. Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  5. Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  6. Sprinkle with sea salt and celery salt.

That Delicious Looking Bread Aladdin Give Away

This might be one of the pivotal Disney food moments. The bread that Abu bites into always looked soooo delicious.

Then Aladdin, the good guy he is, gave away his half and Abu reluctantly followed. 

I looked all over for an Arabic bread that resembled the one shown, but I couldn’t find any middle eastern bread recipes that were loafs like that. The closest I found was Taftoon (or taftan). The bread shown resembled french bread mostly, so I came up with a combination recipe that actually tasted really good. Kinda like a sweeter french bread.

Ingredients
  1. 1 cups warm water
  2. 3/4 cup milk
  3. 1 tablespoon yeast
  4. 1 tablespoon vegetable oil
  5. 1 tablespoon sugar
  6. 1 tbs greek yogurt
  7. pinch saffron
  8. ¼ tsp cardamom powder
  9. 2 tbs ghee (regular butter can be substituted)
  10. 2 teaspoons salt
  11. 5 -5 1⁄2 cups bread flour
  12. Cornmeal
Instructions
  1. Dissolve yeast in warm water and sugar in large bowl. Let sit for 10 minutes to allow yeast to proof or foam
  2. Add salt, milk oil, yogurt, saffron, cardamom, and 3 cups flour; beat for 2 minutes.
  3. Stir in 2 cups flour to make a stiff dough. Add more milk or flour if needed.
  4. Knead until smooth and elastic, about 10 minutes.
  5. Place in oiled bowl, turn dough to coat all sides, cover and let rise until doubled.
  6. Punch down and divide in half.
  7. Shape dough into two long slender loaves.
  8. Grease and sprinkle with cornmeal either a french bread pan or large cookie sheet.
  9. Place loaves in pan and cut diagonal gashes on top of each loaf.
  10. Cover and let rise until doubled.
  11. Brush with a mixture of 2 tbs Ghee (or butter) and 1 tbs milk
  12. Bake at 375 degrees for about 30 minutes.

Polly wants a Cracker

I made some tasty crackers based on middle eastern lavash cracker bread. But I won’t be able to experience the disgusting crackers until I keep them in my pocket for a while until they start molding.

Ingredients
  1. 1 cup lukewarm water
  2. 1/4 cup whole wheat flour
  3. 1 (.25 ounce) envelope active dry yeast
  4. 1 teaspoon salt
  5. 3 cups all-purpose flour
Instructions
  1. In a large bowl, stir together the water, whole wheat flour, and yeast until moistened.
  2. Mix in the salt and 1 cup of all-purpose flour.
  3. Gradually mix in the rest of the flour using a mixer with a dough hook attachment or wooden spoon.
  4. When the dough comes together, knead in your mixer or on a floured surface for 8 to 10 minutes to make an elastic ball.
  5. Add more flour or water if needed to keep dough from getting sticky or too stiff.
  6. Pour a little bit of oil in the bowl and turn the dough to coat.
  7. Cover and let rise in a warm place until doubled in size, about 1 hour.
  8. Punch down the dough and divide into balls about the size of a grape.
  9. Rolling the dough into a long log helps to divide it evenly.
  10. Roll each piece into a ball and cover with a damp kitchen towel for 30 minutes to rest.
  11. Preheat the oven to 500 degrees F (260 degrees C). Place a baking sheet on the center rack of the oven so it can preheat at the same time. Do not grease.
  12. Roll each ball into a circle about 8 inches across. The dough should be paper thin, almost translucent. If they are too thick, they will bubble up like pita breads.
  13. Pull out the oven shelf and place as many crackers on your baking sheet as you can fit, 2 or 3. Close the oven and bake for about 3 minutes. The crackers should be lightly browned on the top with small bubbles.
  14. You may have to adjust your thickness for the next batch.

Ingredients
  1. ½ teaspoon saffron
  2. 2 cups plain whole-milk yogurt
  3. 1 tablespoon chopped garlic
  4. 1 whole chicken
  5. 1tbs flour
  6. 3 teaspoons paprika (divided)
  7. 1 tablespoon dried mint (divided)
  8. salt and black pepper to taste
  9. 1/3 cup melted butter
Instructions
  1. In a small bowl, combine saffron with 1 tablespoon water and let soak 10 minutes.
  2. Place in food processor with yogurt and garlic and purée until smooth and yellow.
  3. Place chicken in glass or ceramic bowl; pour yogurt mixture on top, turn to coat; cover and refrigerate at least 3 hours or overnight.
  4. Heat oven to 350F
  5. Remove chicken from bowl and place into a 9x13 pan lined with foil (or whatever size fits your chicken).
  6. Discard the extra yogurt mixture
  7. Sprinkle 2 tsp paprika, 1/2 tbs mint, salt and pepper over chicken
  8. Put in oven and partially cover with aluminum foil
  9. Mix the rest of the paprika and mint, plus some salt and pepper into the melted butter
  10. Brush the chicken periodically (every 20 mins or so) with butter mixture.
  11. Let cool for a few minutes after cooking

  1. 20 minutes of cook time per pound of chicken

I didn’t make quite that much Baklava, especially because this was my first time trying to make baklava. I made it the Arabic way as opposed to the Greek way, using rose water syrup instead of honey to sweeten the baklava. Ingredients
  1. 1 (16 ounce) package phyllo dough
  2. 1 pound chopped nuts (pistachios, almonds, pecans)
  3. 1 cup butter
  4. 1 teaspoon ground cinnamon
  5. 1 cup water
  6. 1 cup white sugar
  7. 1 teaspoon vanilla extract
  8. 1/2 cup rose water syrup
Instructions
  1. Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan.
  2. Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep.
  3. Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp.
  4. Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and rose water syrup. Simmer for about 20 minutes.
  5. Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up.

Oh man, it was such a good cook this week. The Baklava was AMAZING. Everyone that tried it loved it. Sadly, the worst dish was the chicken. But it was still really good. The chicken was super moist, just not super flavorful. The bread was ALMOST as good as Abu made it look. And the french fries, mmm, I usually don’t love french fries, but those turned out great.

Verdict:

Crackers – 8.5/10

  1. 25g butter
  2. 1 onion, finely chopped
  3. 10 cloves garlic, roughly chopped
  4. sprig of thyme
  5. 150ml crème fraiche
  6. White Wine
  7. Salt
For the garlic garnish
  1. 10ml olive oil
  2. 1 clove garlic, finely sliced
Instructions
  1. Heat the butter in a large, heavy-based saucepan set over a medium heat. Sweat the onion with some salt for 6-7 minutes, stirring occasionally, until softened. Add the roughly chopped garlic cloves and the thyme and sweat for 3-4 minutes, stirring regularly making sure the garlic doesn't colour.
  2. Add 1.4ltrs of boiling water to the saucepan and bring to the boil. Reduce to a simmer for 15 minutes, then add the crème fraîche and whisk well. Remove the soup from the heat and discard the thyme sprig. Use a stick blender to purée the soup until smooth.
  3. Return to the heat and adjust to taste using the white wine vinegar and salt. Keep the heat over a low heat as you prepare the garlic garnish; heat the olive oil in a frying pan over a moderate heat. Fry the sliced garlic until golden brown, then remove to a plate lined with kitchen paper to drain.
  4. Ladle the soup into soup bowls and garnish with the fried garlic and some black pepper before serving.

  1. 4 large whole artichokes, top 1 inch and stems removed
  2. 1/4 cup fresh lemon juice
  3. 1/4 cup olive oil
  4. 4 cloves garlic, cloves peeled and crushed
  5. Salt
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place artichokes stem-side down in a bowl and drizzle with lemon juice.
  3. Slightly separate the artichoke leaves with your hands.
  4. Insert a knife blade into the center of each artichoke to create a garlic clove-size space.
  5. Drizzle each artichoke with olive oil.
  6. Press 1 clove of garlic into the center of each artichoke and season with salt.
  7. Tightly wrap each artichoke twice with heavy-duty aluminum foil.
  8. Place in baking dish and bake in the preheated oven until sizzling, about 1 hour 20 minutes

  1. 100 g Mascarpone cheese
  2. 1 eggs size large
  3. 1 tbsp sugar
  4. 4 savoiardi/ladyfingers
  5. 1/2 tsp rum extract
  6. 1 tbsp milk
  7. 1 tsp cocoa powder
  8. 1/2 tsp sugar (to top, optional)
  9. 2 pirouette sticks (optional)
Instructions
  1. Separate the egg whites from the yolks and put them in 2 separate bowls. Mix the yolks with the sugar in one bowl. Stir in the Mascarpone cheese, one spoonful at a time, incorporating well.
  2. In the other bowl, beat the egg whites to form stiff peaks using an electric mixer. Then, add the beaten whites to the yolk-mascarpone mix, blending gently. The cream is ready. Set aside.
  3. Pour the rum extract and the milk into a small dish, then lightly dip the biscuits. Place them in the individual small serving bowls or cups (about 250 ml). Cover the biscuits with the cream. Sprinkle the cocoa powder (and sugar) on top.
  4. Refrigerate for at least one hour. Leave overnight in the refrigerator for best results. Serve cold.

For the cake
  1. 1/2 cup unsalted butter, softened
  2. 1 1/2 cups sugar
  3. 3 large eggs
  4. 2 1/4 cups all-purpose flour
  5. 1 teaspoon salt
  6. 3 1/2 teaspoons baking powder
  7. 1 1/4 cups whole milk
  8. 1 teaspoon vanilla
For the Ganache
  1. 9 oz semisweet chocolate chips
  2. 1 cup heavy cream
  3. 2 tsp rum (flambe'd to burn off the alcohol)
  4. 1 tsp molasses
Instructions
  1. Take the butter out of the fridge to soften and preheat the oven to 350°F.
  2. Prepare the bundt pan by greasing it thoroughly with butter or baking spray. You can also flour it, if you want, although this isn't strictly necessary.
  3. Use a hand mixer or stand mixer to beat the softened butter and sugar together until fluffy and light
  4. Add the eggs and beat until fully incorporated and light.
  5. Beat in the flour, salt, baking powder, and finally the milk and vanilla.
  6. Beat everything together on low for 30 seconds, then high for 3 minutes.
  7. Immediately pour into the prepared pan and bake for 25 to 30 minutes, or until a toothpick comes out clean.
  8. Let cool on wire racks for at least 15 minutes, then flip each pan over onto the rack and tap gently all over. Lift the pan slightly. If the cake doesn't feel like it's falling out smoothly, lay a slightly damp kitchen towel over the pan and tap again. If necessary, let the cakes cool more. If they have been baked thoroughly, however, they should fall right out of the pans once they've cooled a little and the sides of the cake have shrunk back from the pan.
For the Ganache
  1. Place the chocolate into a medium bowl.
  2. Heat the cream in a small sauce pan over medium heat.
  3. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum and molasses if desired.
  4. Allow the ganache to cool slightly before pouring over a cake.

  1. 2 1⁄4 cups water
  2. 3 (3 ounce) boxes lime gelatin
  3. 1 (20 ounce) can crushed pineapple
  4. 8 ounces brick cream cheese, softened
  5. 1⁄2 cup milk
Instructions
  1. Dissolve gelatin in 2 1/4 cup boiling water.
  2. Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
  3. Add pineapple to gelatin.
  4. Pour into 9 x 13 glass casserole and refrigerate until soft set.
  5. Mix the softened cream cheese and milk together until combined.
  6. Add the nuts to cheese/milk mixture.
  7. Mix the jello mixture and cream cheese mixture together.
  8. Refrigerate overnight and cut into squares to serve.

Will it be a meal as old as time?

Sadly, the Tourin and the artichoke weren’t that great. But the Bundt cake might be one of the best we’ve made. The tiramisu was delicious too!

  1. 1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
  2. 2 1/2 cups all-purpose flour (spooned and leveled), plus more for pans
  3. 1/2 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. 1 teaspoon salt
  6. 1 1/2 cups sugar
  7. 2 large eggs
  8. 3 large egg yolks
  9. 2 teaspoons pure vanilla extract
  10. 1 cup low-fat buttermilk
Instructions
  1. Preheat oven to 350 degrees.
  2. Butter and flour two 8-by-2-inch cake pans, tapping out excess flour.
  3. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy.
  5. With mixer on low, beat in eggs and yolks, one at a time. Beat in vanilla.
  6. Alternately beat in flour mixture and buttermilk, beginning and ending with flour mixture; mix just until combined.
  7. Divide batter between pans; smooth tops.
  8. Bake until cakes pull away from sides of pans, 32 to 35 minutes.
  9. Let cool in pans 10 minutes.
  10. Run a knife around edges of pans and invert cakes onto a wire rack. Let cool completely.
  11. Place one cake, bottom side up, on a cake stand. Tuck strips of parchment paper underneath. Using an offset-spatula or table knife, spread top with Whipped Frosting. Top with remaining cake; frost top, then sides.

  2. 125 g butter
  3. 250 g sugar
  4. 200 g chocolate

  1. Preheat oven to 180 ° C (gas mark 6).
  2. Melt the chocolate in a saucepan with a little water.
  3. Off the heat, add the butter, flour and yeast.
  4. Prepare a foam with egg yolk , sugar and a little water; add it to the chocolate preparation.
  5. Beat the egg whites until soft peaks form and incorporate them into the pan gently.
  6. Pour into a mold greased with high edges, and bake for about 35 minutes.

Belle’s Berry Sorbet

Notice that in this whole song, there were only a couple non-sugary dishes. Maybe the true intentions of the staff were to fatten Belle up so they could eat her! But I guess this isn’t a Brother’s Grimm Fairy Tale.

The first dish I believe is a sorbet of some sort. So here is Belle’s Berry Sorbet

Ingredients
  1. 1-3/4 cups sugar
  2. 1-3/4 cups water
  3. 2 cups raspberries
  4. 2 cups strawberries
  5. 1-1/2 cups real cherry juice
  6. 1/2 cup fresh lime juice
  7. 2 tablespoons orange juice concentrate
Instructions
  1. Combine the sugar and water in a large pot.
  2. Boil until the sugar has dissolved completely.
  3. Stir in the strawberries and raspberries.
  4. Continue cooking for ten minutes.
  5. Strain through a tight strainer.
  6. Refrigerate the juice until chilled and toss the pulp.
  7. Once your juice has cooled stir in the cherry juice, lime juice, and orange concentrate (I added a bit extra orange concentrate).
From here you have three options
  1. - pour mixture into an ice cream maker and follow instructions that came wit it.
  2. - pour into an air tight container. Freeze solid. Blend until smooth and freeze again.
  3. - pour into an air tight container and place into the freezer. Whisk every 20 minutes for the first two hours then freeze solid.

  2. 1 (3-ounce) box strawberry-flavored instant gelatin
  3. 1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
  4. 4 large eggs
  5. 1/2 cup vegetable oil
  6. 1/4 cup water
Strawberry Cream Cheese Frosting
  1. 1/4 cup butter, softened
  2. 1 (8-ounce) package cream cheese, softened
  3. 1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
  4. 1/2 teaspoon strawberry extract
  5. 7 cups confectioners' sugar
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
  2. In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.
  3. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting
  1. In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners' sugar, beating until smooth.
  2. Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

  1. 1 cup finely chopped strawberries
  2. 1/2 cup sugar, divided $
  3. 5 tablespoons water, divided
  4. 3/4 teaspoon unflavored gelatin
  5. Dash of salt
  6. 2 large egg whites
  7. 1/4 teaspoon vanilla extract
  8. 1/2 cup heavy whipping cream
Instructions
  1. Combine chopped strawberries and 1 tablespoon sugar in the bowl of a mini chopper or food processor, and toss gently.
  2. Let stand for 10 minutes.
  3. Process until smooth.
  4. Pour 2 tablespoons water in a large bowl, and sprinkle with gelatin.
  5. Let stand for 5 minutes.
  6. Place 6 tablespoons sugar, the remaining 3 tablespoons water, and dash of salt in a small heavy saucepan over medium-high heat; bring to a boil, stirring just until sugar dissolves. Cook, without stirring, until a candy thermometer registers 240° (about 4 minutes).
  7. Add egg whites to gelatin mixture; beat with a mixer at high speed until foamy.
  8. Gradually add remaining 1 tablespoon sugar, beating at high speed until soft peaks form. Gradually pour hot sugar syrup into egg white mixture, beating first at medium speed and then at high speed until stiff peaks form. (It helps to form the peaks if you beat with the bowl resting in a larger bowl of ice or ice water)
  9. Beat in vanilla.
  10. Place cream in a large bowl; beat with a mixer at high speed until stiff peaks form.
  11. Gently fold one-fourth of egg white mixture into whipped cream.

  1. 200 ml milk
  2. 50 ml heavy cream
  3. 1/4 tsp vanilla extract
  4. 80 g caster sugar
  5. 2 eggs
  6. 2 tablespoons flour
Instructions
  1. Combine milk and vanilla in a saucepan. Heat until it starts to softly boil.
  2. While the milk is heating, beat the eggs and sugar in a medium bowl until the mixture is a pale yellow.
  3. Add the flour and stir.
  4. Add the boiling milk and mix well.
  5. Pour the mixture into the pot and cool over a low heat, stirring occasionally, until mixture thickens.
  6. Serve warm or place in refrigerator and serve chilled

  1. 4 c diced potatoes
  2. 1/2 c finely chopped green onions
  3. 1/2 c chopped parslay
  4. 4 Tbsp good olive oil
  5. 1 qt chicken broth, low salt
  6. 1 Tbsp salt
  7. 1/2 tsp pepper
  8. 2 c heavy cream
  9. 4 Tbsp all purpose flour
  10. 1 bay leaf
Instructions
  1. 1 Saute potatoes, onion and parslay in oil. Cover and cook on medium heat for 15 to 20 minutes, until pototpes are tender and translucent.
  2. 2 Add stock, bay leaf and seasonings. Mix together cream and flour. Add to potatoes. Simmer 30 minutes. Remove bay leaf. To serve:heat and garnish with chives.

The Grey Stuff (It’s Delicious)

Ok ok, we’re always asked if we have made the grey stuff. It is one of the most requested recipes on this blog. We finally have it for you. We took from what Be Our Guest restaurant makes in Disney World. I figure their recipe should be close, as they are official. So without further ado, here is the recipe for the Grey Stuff!

  1. 1 1/4 cups milk
  2. 1/2 cup heavy cream
  3. 1 package (3.4 oz.) Instant French Vanilla Pudding Mix
  4. 1 tub (8 oz.) Whipped Topping at room temperature
  5. 3 tbsp Instant Chocolate Pudding Mix
  6. 15 Oreo cookies
Instructions
  1. Gently whisk the vanilla pudding, milk and heavy cream in a large bowl
  2. Chill mixture in refrigerator for 15 minutes
  3. While chilling, place Oreos into a food processor or blender and blend until they are a dust.
  4. Mix the Oreo powder with the chilled pudding mixture
  5. Add the chocolate pudding mixture and stir.
  6. Carefully fold in the whipped topping until uniformly mixed
  7. Chill in refrigerator for 1+ hours.

Crescent Rolls (sausage-filled and chocolate filled)

There are 2 different crescent rolls on the hors d’oeurve plate. One with a sausage inside and one with something else. I had no idea what that something else was, so I decided it was chocolate. This is a recipe for the crescent rolls. You may insert whatever you would like in the middle before you roll and cook them. Also, Pillsbury crescent rolls would be a good substitute if you don’t want to go through this lengthy process

Ingredients
  1. 1 (.25 ounce) package active dry yeast
  2. 1/3 cup warm water
  3. 1/4 cup white sugar
  4. 1/2 teaspoon salt
  5. 1 eggs
  6. 1/4 cup butter (room temperature)
  7. 2 cups all-purpose flour
  8. 1/8 c butter (softened)
For Filling
  1. 15 lil-smokey sausages
  2. or 1/2 cup Nutella
Instructions
  1. Dissolve yeast in warm water.
  2. Stir in sugar, salt, eggs, butter, and 1 cups of flour.
  3. Beat until smooth. Mix in remaining flour until smooth.
  4. Scrape dough from side of bowl.
  5. Knead dough, then cover it and let rise in a warm place until double (about 1 1/2 hours).
  6. Punch down dough.
  7. Roll into a 12-inch circle.
  8. Spread with butter.
  9. Cut into 10 to 15 wedge.
  10. Place filling inside of roll (whether it be sausage or nutella)
  11. Roll up the wedges starting with the wide end.
  12. Place rolls with point under on a greased baking sheet.
  13. Cover and let rise until double (about 1 hour).
  14. Bake at 400 degrees F (205 degrees C) for 12-15 minute or until golden brown.
  15. Brush tops with butter when they come out of the oven.

  1. 1 1/2 pounds cubed beef stew meat
  2. 1/4 cup all-purpose flour
  3. 2 tablespoons vegetable oil
  4. 2 (14.5 ounce) cans Italian-style diced tomatoes
  5. 1 (14 ounce) can beef broth
  6. 4 carrots, chopped
  7. 2 potatoes, peeled and chopped
  8. 3/4 teaspoon dried thyme
  9. 2 tablespoons Dijon-style prepared mustard
Instructions
  1. Combine meat and flour in a large plastic food storage bag and toss to coat evenly.
  2. In a 6 quart saucepan brown meat in hot vegetable oil.
  3. Season with salt and pepper, if desired.
  4. Add diced tomatoes, beef broth, carrots, potatoes and thyme.
  5. Bring to boil; reduce heat to medium-low, cover; and simmer for 1 hour or until beef is tender.
  6. Blend in mustard and serve.

Ingredients
  1. 2 tablespoons finely grated parmesan cheese
  2. 1 cup milk, whole
  3. 2 1⁄2 tablespoons unsalted butter
  4. 3 tablespoons all-purpose flour, unbleached
  5. 1⁄2 teaspoon paprika
  6. 1⁄2 teaspoon salt
  7. 1 pinch ground nutmeg
  8. 4 large egg yolks
  9. 5 large egg whites
  10. 1 cup gruyere cheese, packed coarsely (about 4 ounces) (can substitute for swiss cheese)
Instructions
  1. Position rack in lower third of oven and preheat to 400 degrees.
  2. Butter 6-cup (1-1/2 quart) souffle dish.
  3. Add Parmesan cheese and tilt dish, coating bottom and sides.
  4. Warm milk in heavy small saucepan over medium-low heat until steaming.
  5. Meanwhile, melt butter in heavy large saucepan over medium heat.
  6. Add flour and whisk until mixture begins to foam and loses raw taste, about 3 minutes; do not allow mixture to brown).
  7. Remove saucepan from heat; let stand 1 minute.
  8. Pour in warm milk, whisking constantly until very thick, 2 to 3 minutes.
  9. Remove from heat; whisk in paprika, salt, and nutmeg.
  10. Add egg yolks 1 at a time, whisking to blend after each addition.
  11. Scrape souffle base into large bowl.
  12. Cool to lukewarm. DO AHEAD; can be made 2 hours ahead.
  13. Cover and let stand at room temperature.
  14. Using electric mixer, beat egg whites in another large bowl until stiff but not dry.
  15. Fold 1/4 of whites into lukewarm or room temperature souffle base to lighten.
  16. Fold in remaining whites in 2 additions while gradually sprinkling in Gruyere cheese.
  17. Transfer batter to prepared dish.
  18. Place dish in oven and immediately reduce oven temperature to 375 degrees.
  19. Bake until souffle is puffed and golden brown on top and center moves only slightly when dish is shaken gently, about 25 minutes (do not open oven door during first 20 minutes).
  20. Serve immediately.

  2. Pie dough for the top of pie
  3. 5 cups blackberries (or mixed berries)
  4. 1/2 cup water
  5. 1 cup sugar
  6. Blueberries and cherry to top
Instructions
  1. Place the berries into the prepared pie tin.
  2. Heat water to a boil
  3. Reduce heat and add sugar and stir until thickened
  4. Pour sugar water mixture over berries
  5. Place flattened pie dough on top of pie
  6. Cut slits in top of pie for ventilation.
  7. Cook for 30 minutes or until the pie is a golden brown
  8. Top with berries and a cherry

  1. 2 pints blueberries (4 cups)
  2. 3⁄4 cup sugar
  3. 6 tablespoons cornstarch
  4. 3 tablespoons water
  5. 1 teaspoon lemon rind, grated
  6. 1 tsp lemon juice
  7. 1/4 tsp Cream of Tartar
  8. 1⁄2 teaspoon cinnamon
  9. 1⁄4 teaspoon nutmeg
  10. 2 tablespoons unsalted butter
  11. 1 egg, well beaten with
  12. 1 pinch salt, for egg washing top of pie
  13. 2 tablespoons sugar, for top of pie
  14. 2 boxes of pie dough mix
  15. 2 tbs rum
Instructions
  1. Combine 1 cup berries with 3/4 cup sugar in pan.
  2. Simmer on low heat until sugar is melted and mixture is very liquid; about 5 minutes.
  3. Combine cornstarch and water in bowl.
  4. Add to pan with blueberries.
  5. Cook over medium heat until mixture comes to full boil and is clear and thick.
  6. Pour hot mixture into large bowl.Cool until warm.
  7. Fold in remaining 3 cups of blueberries, lemon rind, lemon juice, cream of tartar, cinnamon, nutmeg and butter.
  8. Let cool.
  9. Prepare the pie dough as directed.
  10. In a box-shaped dish (we used a 9x7 bread pan), line with pie dough.
  11. Add the filling to the dish.
  12. Add top crust and brush with egg wash, sprinkle with sugar.
  13. Preheat oven to 400°F but reduce heat to 375°F when you put pie in oven. Bake about 40 minutes. Check pie halfway through baking; cover edges with a strip of foil if edges are getting too brown.
For Flambe
  1. In a heatproof container, pour 4 tbs rum.
  2. With a long match, immediately light rum on fire.
  3. Let burn for a bit and then pour onto the pudding.

  1. 6 ounces semisweet baking chocolate, chopped
  2. 3 tablespoons unsalted butter, softened
  3. 3 eggs, separated*
  4. 1/2 teaspoon cream of tartar
  5. 1/4 cup plus 2 tablespoons sugar
  6. 1/2 cup heavy cream, cold
  7. 1/2 teaspoon vanilla extract
  8. 2 tbs Rum for flambe
Instructions
  1. Place the chocolate and butter in a heatproof bowl and place over a saucepan containing barely simmering water (or use a double boiler).
  2. Melt the chocolate and butter together and stir with a wooden spoon until smooth.
  3. Remove from heat and cool slightly.
  4. Add the egg yolks to the chocolate, 1 by 1, beating with a whisk until incorporated.
  5. Set aside.
  6. In another bowl, beat the egg whites until foamy.
  7. Add the cream of tartar and continue to beat.
  8. Gradually whisk in 1/4 cup sugar and continue beating until stiff peaks form.
  9. Beat heavy cream in a chilled bowl until it begins to foam and thicken up. Add the remaining 2 tablespoons sugar and vanilla. Continue to whip the cream until it holds soft peaks.
  10. Gradually and gently fold the egg whites into the chocolate mixture to lighten it.
  11. Then, delicately fold in the whipped cream.
  12. Take care not over work the mousse.
  13. Divide mousse into 4 individual glasses.
  14. Cover and chill for several hours.
For Flambe
  1. In a heatproof container, pour 2 tbs rum.
  2. With a long match, immediately light rum on fire.
  3. Let burn for a bit and then pour onto the pudding.

Bonjour! So this week is Beauty and the Beast. Lucky for you and us, there are TONS of foods shown in this movie. So instead of just one week dedicated to the movie, you get FOUR! Baker’s Pumpkin Bread

There are a lot of different foods shown in the Bonjour song. The first lyric when you actually get into the song is “There goes the baker with his tray like always. The same old bread and rolls to sell.”

We have made normal bread in other posts, so we decided to make some pumpkin bread. There is a man in the town that is lugging around pumpkins, so it’s not a far stretch that the baker could be carrying pumpkin bread. (Plus, we just really like pumpkin bread)

Ingredients
  1. 1 (15 ounce) can pumpkin puree
  2. 4 eggs
  3. 1 cup vegetable oil
  4. 2/3 cup water
  5. 3 cups white sugar
  6. 3 1/2 cups all-purpose flour
  7. 2 teaspoons baking soda
  8. 1 1/2 teaspoons salt
  9. 2 tsp lemon juice
  10. 1 tsp rum
  11. 1 teaspoon ground cinnamon
  12. 1 teaspoon ground nutmeg
  13. 1/2 teaspoon ground cloves
  14. 1/4 teaspoon ground ginger
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease and flour three 7x3 inch loaf pans or 1 9x4 inch pan and then 6 cup cakes.
  3. In a large bowl, mix together pumpkin puree, eggs, rum, lemon juice, oil, water and sugar until well blended.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
  5. Stir the dry ingredients into the pumpkin mixture until just blended.
  6. Pour into the prepared pans.
  7. Bake for about 50 minutes in the preheated oven.
  8. Loaves are done when toothpick inserted in center comes out clean.

  1. 3 1/2 cups bread flour
  2. 1 teaspoon of salt
  3. 1 package of active dry yeast
  4. 2 tablespoons of white sugar
  5. 3/4 cup of lukewarm water that is divided
  6. 1/2 cup of lukewarm milk
Instructions
  1. Sift the flour and salt in a bowl and then set aside.
  2. Mix 1/4 cup of water with yeast and stir until it has dissolved.
  3. Mix in the sugar and let stand for about 10 to 15 minutes.
  4. Make a well in the flour and pour the yeast mixture in.
  5. Add the milk and 1/4 cup water and mix together.
  6. Add the rest of the water slowly until dough is soft and moist.
  7. Knead for about 8 to 10 minutes.
  8. Place in oiled bowl and cover it with a damp towel.
  9. Let rise for about 2 hours.
  10. Place dough on floured surface and punch down.
  11. Cover it again and then let it rest for about 5 minutes.
  12. Divide it into 10 pieces.
  13. Roll each piece into oval shape and then place on a baking sheet.
  14. Cover with damp towel and let rise for about 30 minutes.
  15. Slice a slit down the center (vertically) on each roll.
  16. Cover and let rest for 15 minutes.
  17. While rolls are at rest, place a dish that is oven proof and with about 1 1/3 inch of water in it in the lower part of the oven and heat it to 450 degrees Fahrenheit.
  18. Bake the rolls for about 15 minutes and then let cool down. Serve.

Marie the Baguettes!

Now, the movie doesn’t actually show the baguettes, but I love the line the baker says. “That’s nice. MARIE, the baguettes! Hurry up!”  So we made some baguettes.  They were similar to the rolls, but I think this recipe is better.

  9. On a lightly floured surface, roll into a 16x12 inch rectangle.
  10. Cut dough in half, creating two 8x12 inch rectangles.
  11. Roll up each half of dough tightly, beginning at 12 inch side, pounding out any air bubbles as you go.
  12. Roll gently back and forth to taper end. It might help to have damp hands.
  13. Place 3 inches apart on a greased cookie sheet.
  14. Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf.
  15. Cover, and let rise in a warm place for 30 to 40 minutes, or until doubled in bulk.
  16. Preheat oven to 375 degrees F (190 degrees C).
  17. Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
  18. Bake for 20 to 25 minutes in the preheated oven, or until golden brown

Ingredients
  1. nonstick vegetable oil spray
  2. 1 1/2 cups all-purpose flour
  3. 2 teaspoons baking powder
  4. 3/4 teaspoon kosher salt
  5. 1 cup sugar
  6. 1 tablespoon finely grated lemon zest
  7. 3/4 cup whole-milk Greek yogurt
  8. 1/2 cup vegetable oil
  9. 2 large eggs
  10. 1/2 teaspoon vanilla extract
  11. 2 tablespoons raspberry jam
  12. 1 can cream-cheese frosting (can dye pink with red food coloring)
Instructions
  1. Preheat oven to 350°F.
  2. Coat a 9" circular cake pan with nonstick vegetable oil spray. Dust with flour; tap out excess.
  3. Whisk 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, and 3/4 teaspoon kosher salt in a medium bowl.
  4. Using your fingers, rub 1 cup sugar with 1 tablespoon finely grated lemon zest in a large bowl until sugar is moist.
  5. Add 3/4 cup whole-milk Greek yogurt, 1/2 cup vegetable oil, 2 large eggs, and 1/2 teaspoon vanilla extract; whisk to blend.
  6. Fold in dry ingredients just to blend.
  7. Pour batter into prepared pan; smooth top.
  8. Bake until top of cake is golden brown and a tester inserted into center comes out clean, 20-25 minutes.
  9. Let cake cool in pan on a wire rack for 15 minutes. Invert onto rack; let cool completely.
  10. Frost with cream cheese frosting

  1. Can be made 3 days ahead. Store airtight at room temperature. Makes 1 layer of cake. For a 2 layer cake, double recipe.

  1. About 1/4 pound ginger, peeled
  2. 1 cup sugar
  3. 1 1/2 tablespoons fresh lemon juice
  4. 1/4 teaspoon active dry yeast
  5. About 2 quarts water
Instructions
  1. Grate enough ginger using fine grater to measure 3 1/2 tablespoons, then put in a fine-mesh sieve set over a bowl to collect juice, pressing on solids and then discarding. I also found that putting the ginger in a coffee filter or a teabag and let it steep in 1 cup of hot water for 15 minutes does the job too.
  2. Place funnel in neck of bottle and pour in 3 tablespoons ginger juice (reserve any remaining for another use).
  3. Add sugar, lemon juice, yeast, and a pinch of salt.
  4. Fill bottle with water, leaving about 1 1/2 inches of space at top.
  5. Remove funnel and screw cap on tightly.
  6. Gently shake bottle to dissolve sugar.
  7. Let stand at room temperature until plastic feels hard and no longer indents when squeezed, 24 to 36 hours.
  8. Chill ginger beer until very cold.
Notes
  1. Ginger beer keeps, chilled, 1 week.

So everything was really good. The baguette was better than the french rolls. The pumpkin bread is delicious especially with a little butter on it. The cake, although overcooked was really really good and would probably be even better if it were cooked right, and the ginger beer wasn’t all that bad!

Rescuers Down Under – Pea Soup, Boiled Eggs, [Bonus] Hedgehog Slice

Rescuer’s Down Under was one of my very favorite movies as a kid. I really wanted to be Cody and scale giant walls in Australia to save HUGE eagles. Watching it again made me relive all my childhood fantasies. I always remembered the food in this. PEA SOUP! I quote this line too often.

 

Pea Soup!

Right after Cody gets caught, we see a fancy restaurant for humans, then on the chandelier, there’s a rodent section, complete with cricket waiters. One of the humans drop a pea, which is picked up by one of the bugs and given to the bug chef.

Pea soup is now on the menu. 
I had never made pea soup before. We don’t see what is already in the thimble the chef uses to make the pea soup, so I took some liberties in this recipe, assuming that he got some other items that humans might have dropped.

Ingredients
  1. 1 teaspoon olive oil
  2. 1 large onion, sliced (about 1 1/2 cups)
  3. 2 1/2 cups low-sodium chicken broth
  4. 1/4 teaspoon dried rosemary
  5. 1/4 teaspoon dried oregano
  6. 1/2 teaspoon salt
  7. Freshly ground black pepper
  8. 1 (10-oz) bag frozen peas
  9. 4 teaspoons plain greek yogurt or sour cream (optional)
Instructions
  1. In a large pot, heat the olive oil over moderately-low heat.
  2. Add the onion, cover and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the broth, spices, salt and a few turns of freshly ground black pepper and bring to a boil. Add the peas and cook just until defrosted.
  4. In a blender, puree the soup in 2 batches until very smooth.
  5. If serving hot, return the soup to the pot and bring just to a simmer.
  6. If serving cold, transfer to the refrigerator to chill.
  7. Ladle into bowls.
  8. Stir the yogurt so that it is smooth and top each serving with a swirl of yogurt.

Not Joanna Eggs

One of the best scenes in the movie is when Joanna is stealing the poacher’s eggs.

To make this super realistic, I would have to swallow a whole uncooked egg. I’m not sure if I can physically do that, so I opted to make a hardboiled egg and eat that.

To make good hardboiled eggs, put the eggs in a pot and cover with about an inch of water. Make sure you don’t overcrowd the pot with eggs. Bring the water to a roaring boil. Once it reaches the boil, turn the heat to a low and let it simmer, covered for 10-12 minutes. Strain the water and let the eggs sit in cold water for at least another 10-12 minutes before serving.  I also found this handy chart of what the eggs look like at certain cook times.

Animal crackers aren’t really a recipe, but it prompted me to make an Aussie dessert. Hedgehog Slice. It’s basically a fudge-type food with biscuits (or animal crackers) inside.

  1. 250g animal crackers or other biscuit cookie such as Maria cookies or Biscoff cookies (crushed into small pieces)
  2. ½ cup soft brown sugar
  3. ¼ cup cocoa
  4. 100g dark or milk chocolate, chopped
  5. 1 Tbsp golden syrup (can be made with 2 tsp light corn syrup and 1 tsp dark molasses)
  6. 100g butter
  7. 1 egg
  8. (optional: ½ cup desiccated coconut)
Chocolate topping
  1. 200g dark chocolate, chopped
  2. 50g butter
Instructions
  1. Lightly grease a 20cm (8in) square cake tin and line the base and sides with baking paper or grease.
  2. In a large bowl combine animal crackers, brown sugar, (coconut), and cocoa.
  3. In a small saucepan, over a gentle heat stir chocolate, golden syrup and butter until mixture is melted and combined.
  4. Cool slightly.
  5. Whisk in egg.
  6. Pour mixture into the dry ingredients and mix well to combine.
  7. Spoon into prepared tin and press firmly into the tin with the back of the spoon.
  8. Chill while preparing the chocolate topping.
Chocolate topping
  1. Melt chocolate and butter in a heatproof bowl over hot water until melted.
  2. Stir to combine. Spread over the chilled slice.
  3. Refrigerate until topping is set.
  4. Cut into small squares to serve
Notes
  1. I found it tastes better when refrigerated overnight.

So, I think I overseasoned the pea soup. The recipe provided is less seasoned. Needless to say, I wasn’t too happy with it. However, I LOVED the hedgehog slice. It was delicious and probably VERY fattening.

Les poissons, les poissons! How I love les poissons. Love to chop and to serve little fish. First I cut off their heads, then I pull out their bones. Ah mais oui, ca c’est toujours délice.

  1. Fill a pot with water so that it'll cover the crabs, add the white wine, salt, pepper and lemon juice
  2. Bring pot to a boil
  3. Add the onion, celery and parsley
  4. In a separate bowl, combine the salad dressing, white wine, egg, milk salt and pepper
  5. Get your crab. If it's been in the fridge or icebox, it'll be less active and easier to coat.
  6. Dip the crab in the sauce and coat it in the flour
  7. Now undo all that work and throw it in the pot and boil for 7-10 minutes
  8. Serve on a bed of lettuce with lemon wedges, fresh parsley and croutons

  4. Add the crab and boil for 7-10 minutes.
For the Stuffing
  1. Remove the crab and let cool.
  2. Preheat the oven to 375F.
  3. Clean out the crab and set aside the meat.
  4. Add the meat to a bowl with fresh mayo, parsley, croutons.
For the breading
  1. In a separate bowl, combine the salad dressing, white wine, egg, milk salt and pepper
  2. Dip the stuffed crab in the sauce and then coat it with flour.
  3. Place on a baking sheet and cook in oven for ~20 minutes, until the stuffing starts sizzling and the breading gets golden.
  4. Serve on a bed of lettuce with lemon wedges.

  2. Sea salt
  3. 1/2 cup butter

  1. Like the chef on Little Mermaid, rub the fish with the salt. (You may remove the head and gut it before this)
  2. Melt butter in pan on a medium heat.
  3. Place the salted fish in the pan and let cook for ~10, until the fish has reached 145F
  4. Remove from pan and cut into cubes
  5. Cut the swiss cheese into cubes as well
  6. Place 1 cube of fish on top of 1 cube of swiss cheese, top with an olive and skewer with a toothpick.

Chocolates for Dogs

I know, I know, chocolate is really bad for dogs. But we see Georgette eating chocolates from a heart-shaped box and doing yoga.

I searched and found that Carob, a chocolate substitute, and its cleared by ASPCA as non-toxic for dogs. So we made some molded chocolates filled with peanut butter. Our dog loved them!  We also made some milk-chocolate candies for us too 🙂

Ingredients
  1. 1 Bag Carob
  2. 1/2 cup milk
  3. 3 tbs peanut butter
Instructions
  1. Heat up the milk over a very low heat
  2. Add the carob chips a little bit at a time
  3. Stir vigorously with wooden spoon.
  4. Once all the chips are added, you might need to add a couple more splashes of milk until the carob is creamy
  5. Let the carob cool a bit
  6. Fill candy mold 1/2-3/4 way full with the carob
  7. Place peanut butter in a pastry bag (or a plastic bag with its corner cut)
  8. Squeeze a little dab of peanut butter on top of the carob in each mold. About the size of a big pea.
  9. Cover the peanut butter and fill rest of mold with carob
  10. Place in freezer for about an hour or until the carob solidifies. You may also place in fridge, but wait longer for the solidification.
Notes
  1. You might need to hold the pan off the stove a bit if it gets too hot and you start to smell it burn.
  2. For milk chocolate, melt the milk chocolate in a microwave on a low heat, stirring every 30 seconds, or melt in a double boiler. Follow the rest of the instructions. You may place anything you wish in the middle of the chocolates. I put in Nutella and raspberry jam.

Pink Champagne Cake

At the end of the movie, everything is good and every is around Jenny as they celebrate her birthday.

Being super rich, she probably had a fancy cake (even though you only see a generic pink cake). How do you make a fancy cake? With champagne of course! This is a somewhat difficult and time consuming recipe. Just a head’s up.

There is also chocolate, strawberry and vanilla ice cream shown in the movie. This cake pair well with Neapolitan ice cream! So pick some of that up from the store.

For the Champagne Reduction
  1. 2 cups (480 ml) champagne, pink champagne or sparkling wine
For the Champagne Velvet Layer Cake
  1. 2½ cups (280 grams) sifted Self-Rising Flour
  2. 2 cups (400 grams) granulated sugar
  3. ½ cup (1 stick/113 grams) unsalted butter, at room temperature
  4. ¼ cup (48 grams) shortening
  5. ¼ cup (56 grams) vegetable oil
  6. ½ cup (120 ml) champagne reduction
  7. ½ cup (120 ml) buttermilk, at room temperature
  8. ¾ cup (180 grams) egg whites (about 6), at room temperature
  9. ½ teaspoon (2.5 ml) pure almond extract
  10. ½ teaspoon (2.5 ml) pure vanilla extract
  11. Extra flour and shortening to prepare cake pans
  12. 1 cup raspberry jam
  13. 2 containers of buttercream frosting
  14. Red food coloring to dye the frosting
Prepare the Champagne Reduction
  1. In a medium heavy saucepan over medium-high heat, bring champagne to a boil.
  2. Boil until reduced to ½ cup, about 15 minutes.
  3. Remove from heat; set aside to cool completely.
  4. Meanwhile, arrange oven rack in lower third of oven and preheat oven to 350ºF.
  5. Grease three 8-inch round with shortening or oil.
  6. Line bottoms with parchment or wax paper cut to fit the size of pans.
  7. Grease paper linings and dust lined pans with flour, tapping out the excess.
  8. Set aside.
Prepare the Champagne Velvet Layer Cake
  1. Mix self-rising flour and sugar until well combined and aerated.
  2. Add butter, shortening and oil and mix until thoroughly combined.
  3. Mixture will be very thick.
  4. In a 2-cup glass liquid measuring cup, whisk together champagne reduction, buttermilk, egg whites and extracts using a fork until well blended.
  5. Slowly add half of the liquid mixture to the batter and mix.
  6. Then beat until thoroughly combined, scraping down the sides of bowl as necessary with rubber spatula, about 2 minutes.
  7. Add remaining liquid mixture and beat just until smooth and thoroughly combined, again scraping down the sides of bowl as necessary.
  8. Using rubber spatula, scrape and pour batter into prepared pans dividing evenly (a little over 2 cups of batter per cake pan).
  9. Smooth tops evenly with rubber spatula and then rap each pan on counter surface 2 to 3 times to expel any air bubbles. This step will create a nice level cake.
  10. Bake in preheated oven until a toothpick inserted into center comes out clean, about 25 to 30 minutes.
  11. Cool cakes in pans on wire racks for 10 minutes.
  12. Run thin metal spatula around edges of each cake to loosen, then invert onto wire rack and peel away parchment or wax paper.
  13. Turn right side up onto wire racks (using an additional rack to flip) and cool completely or wrap while still warm to retain moisture.
  14. Wrap each cake layer tightly in plastic food wrap and keep at room temperature until ready to fill and frost.
To Assemble, Frost and Fill the Cake
  1. Mix a couple drops of food coloring into the frosting to turn it into a nice pink color.
  2. Use a scant ¾ cup frosting between each layer.
  3. After frosting each the bottom and middle layer, pipe a simple ¼-inch border of buttercream around the perimeter of the cake to act as a dam to prevent the filling from going over the edge of the cake layer.
  4. Following this, lightly spoon about 4 tablespoons of the Raspberry Filling on top of the buttercream in the center. Using a small angled metal spatula, carefully spread the filling outward to the dam border of buttercream.
  5. Carefully place the next cake layer on top and press down gently.
  6. Proceed to frost the cake as desired with remaining buttercream.
To Make a Rose Cake with “Rose Swirls”
  1. Use a scant ¾ cup frosting between each layer and then proceed to frost the cake with a “crumb coat” or thin coat, but not too thin.
  2. The cake should have good coverage and you should not see the cake peeking through the frosting.
  3. Next, assemble your pastry bag with coupler and tip.
  4. Fill pastry bag and twist closed.
  5. Make sure your hands are not too warm or your buttercream will get too soft. You are now ready to pipe roses!
  6. To pipe roses, start at the bottom and work around the cake to complete a full circle of roses. T
  7. o pipe each rose, start in the center of where you want your rose to be. T
  8. hen pipe in a circular fashion counter-clockwise going around the center point once or twice depending on the size of roses you desire.
  9. The roses don’t need to be perfect!
  10. This is what is so great about piping swirled roses as they look lovely shabby and chic.
  11. It is best to end in the same place each time and I like to end at the top right side of each rose.
  12. Once you complete the first row around the cake, continue with the next row and then the top. To fill in any gaps, I like to pipe small stars or flourishes that contour the rose swirls. Rose Cakes are the best. So simple, but so stunning!

Will it make you get the Street Saviore Faire?

Overall, this was a really good haul. Hot Dogs were great, the cake was one of the best cakes I’ve ever had, and if you were a cat, I’m sure you’d love the concoction. The dog chocolates were pretty disgusting for humans. I don’t really like carob. But my dog loved them. But the milk chocolate candies were amazing.

Disney’s take on Sherlock Holmes may not Bendaduck Cumberbottom worthy, but it’s still great. We have the classic British tea and crumpets shown as well as some beer (which isn’t uncommon in Disney). However, I decided to skip eating a mouse like Ratigan’s cat does.

 

Cheese Crumpets for Toby

Crumpets are usually pan fried and not baked. However Mrs. Judson makes cheese crumpets that resemble muffins.

They also show lots of tea. I don’t drink tea, but if you want to make proper English tea, check out this site. 

When I made the crumpets, I actually missed the fact that they were cheese crumpets. But I’m sure if you add a cup of grated cheddar, it’d turn out great. However, even without the cheese, they were great.

Ingredients
  1. 1 pkg active yeast
  2. 1/2 cup lukewarm water
  3. 1 tsp sugar
  4. 1 1/2 cup warm milk
  5. 2 tbsp butter
  6. 2 tsp sugar
  7. 1/2 tsp salt
  8. grated rind of an orange or lemon
  9. 2 eggs
  10. 3 1/2 cup sifted flour
  11. 1 cup grated cheddar cheese (optional)
Instructions
  1. Soak yeast and first amount of sugar in warm water until frothy (15 minutes).
  2. Add butter, second amount of sugar, salt and orange rind to warm milk and stir.
  3. Add this to the yeast water. Beat, then add the eggs and flour. Add cheese if desired.
  4. Beat until batter is smooth.
  5. Rise for 15 minutes.
  6. Preheat over to 400 °F.
  7. Grease muffin pans.
  8. Fill the greased pans about 2/3 full and bake for 15 minutes or longer, until done.

Of course, we’re keeping this a kid friendly blog, so we decided to make Root Beer! BUUUUUUUUUT, we hit a snag. First, I didn’t realize how hard it was to get dry ice where I live. Then I found a recipe to make Root Beer with yeast. So I went and got yeast and I was going to get root beer extract, but I couldn’t find any root beer extract! I didn’t have enough time to go somewhere else, so I wasn’t able to make the root beer. I’m sorry if I let you guys down. But here’s a recipe.

Ingredients
  1. 2 ounces McCormick® Root Beer Concentrate
  2. 5 pounds sugar
  3. 5 gallons lukewarm spring water, (approximately 95°F)
  4. 1 package (1/4 ounce/7 g) dry active yeast
  5. 1 cup pre-boiled water, (cooled to 85° to 95°F)
Instructions
  1. Clean and sanitize all bottling equipment according to information below. Shake Root Beer Concentrate well. Mix with sugar in a large container. (DO NOT USE ALUMINUM). Stir in spring water.
  2. Dissolve yeast in 1 cup pre-boiled water. Allow yeast to dissolve undisturbed 10 to 15 minutes. Add to sugar mixture and stir well.
  3. Bottle immediately into plastic bottles, leaving 2-inch space at top of bottle. Cap tightly. Store each bottle on its side in a warm place (70° to 80°F) for 1 to 2 days, then store upright in refrigerator at 40° to 45°F for additional 3 to 4 days. Keep refrigerated and consume within 7 to 8 days.
