Finding Nemo – Fish and Chips

Just keep swimmin’ just keep swimmin! This week we had the privilege of watching Finding Nemo. One of the greatest Pixar movies of all time. This was only the second movie not to show any food. So we’re making some food that will make you sad after watching the movie.

Fish and Chips

So…even though fish are friends and not food, we made fish and chips. It’s all thanks to Marlin’s quote at the first of the movie when Nemo goes to school. “They’ve just got to grow up som – THE DROP OFF? THEY’RE GOING TO THE DROP OFF? WHAT ARE YOU, INSANE? WHY DON’T WE FRY THEM UP NOW AND SERVE THEM WITH CHIPS? ”

So here’s a recipe for fish and chips (beer battered of course, this is Australia).

Fish
  1. 225g (1 1/2 cups) self-raising flour
  2. 1 egg, lightly whisked
  3. 375ml (1 1/2 cups) chilled Australian beer
  4. Salt & black pepper
  5. Vegetable oil, to deep-fry
  6. 8 (about 120g each) white fish fillets (such as cod, halibut, flathead or whiting)
  7. Lemon Wedges to serve
Chips
  1. 4 large unpeeled potatoes, cut into wedges
  2. 2 teaspoons olive oil
  3. Salt and Pepper
Chips
  1. Preheat oven to 400ºF
  2. Toss potato wedges with olive oil, salt and pepper
  3. Put in oven for 40 minutes. (flipping halfway through)
Fish
  1. Meanwhile, place egg in a bowl and whisk lightly stir in flour until combined.
  2. Gradually whisk in the beer until batter is smooth.
  3. Season with salt and pepper.
  4. Cover and place in the fridge for 30 minutes to rest.
  5. Heat 2 inch oil to 375ºF
  6. Dip the fish into the batter, shake off excess
  7. Place into oil.
  8. Deep fry until golden brown (4-5 mins)

B.E.N. Makes a mean cheesecake! This movie is the most underrated Disney movie in my opinion. It has good music, an exciting story and great visuals. It makes me want to be a pirate now. So go swab your poop deck and get ready for some alien meals from Treasure Planet. Note: Almost all of the food was truly alien in nature. So we created some suitable alternatives to some of the recipes that were more “down to earth.”

Alponian Chowder

The first bunch of food is shown at the beginning of the movie at the inn. We didn’t make all the food shown because…well…it doesn’t exist here on earth. So we took some liberties and made the dish that Doctor Doppler ate. Alponian Chowder.

Ingredients
  1. 2 pounds beef stew meat, cut into 1/2-inch pieces
  2. 1 teaspoon salt, divided
  3. 1/2 tsp fennel seed
  4. 1/2 tsp corriander
  5. 3/4 teaspoon pepper, divided
  6. 2 tablespoons olive oil, divided
  7. 4 large carrots, sliced
  8. 1 large onion, chopped
  9. 1 medium sweet red pepper, chopped
  10. 1 medium green pepper, chopped
  11. 2 garlic cloves, minced
  12. 1/2 cup Burgundy wine
  13. 4 1/2 cups beef broth
  14. 1 can (14-1/2 ounces) diced tomatoes, undrained
  15. 2 tablespoons tomato paste
  16. 2 tablespoons Worcestershire sauce
  17. 1 bay leaf
  18. 4 medium potatoes (about 2 pounds), cut into 1/2-inch cubes

  1. Add all the ingredients into a slow cooker
  2. Cook on low for 8hrs

Bonzabeast Stew

Here’s another food that was shown. John Silver was cooking this when we first met him. Bonzabeast stew.

It kinda looks like a shrimpy stew, with an eyeball coming out. At least we got a description by the doctor of the taste. Tangy and Robust. We tried to make a stew that fit that description.

Ingredients
  1. 2 lbs large shrimp
  2. 2 tbs blended jalapeno pepper
  3. 1/2 cup lime juice
  4. 2 lbs sweet potatoes, cubed
  5. extra virgin olive oil for tossing the potatoes
  6. salt and pepper
  7. 1 small-medium onion, roughly chopped
  8. 4 garlic cloves, roughly chopped
  9. 1½ lbs fresh tomatoes, quartered, OR 1 28-oz can of good quality whole tomatoes, drained
  10. 2 tbs extra virgin olive oil
  11. 6 cups chicken broth
  12. ½ cup roughly chopped cilantro
  13. 1/4 tsp turmeric powder
  14. juice of 1 lime plus lime wedges for serving
  15. cilantro sprigs for garnishing
  16. Sour Cream and olive to top
Instructions
  1. Whisk together the lime juice and the blended peppers.
  2. Marinade the shrimp in mixture for 1 hr (can marinade while doing the rest of the steps as the shrimp is needed last)
  3. Preheat oven to 450
  4. Puree the onion, garlic and tomatoes in a food processor or blender until smooth.
  5. In a large pot, heat about 2 tablespoons of olive oil over a medium-high heat
  6. Pour the processed onion/garlic/tomato mixture into the pot.
  7. Cook until it has become thicker and pastier (about 10 mins)
  8. Add the broth, cilantro, turmeric and salt/pepper
  9. Reduce heat to low, cover, and let simmer for 30+ minutes
  10. Meanwhile, toss the sweet potatoes with olive oil, salt and pepper
  11. Place on a baking sheet and roast in oven for ~20 minutes
  12. Get the shrimp, discard the marinade and add the shrimp to the potatoes and continue roasting for 4-6 minutes or until the shrimp are done
  13. Place the shrimp and potatoes in the bottom of a bowl and pour the broth over them
  14. Top with sour cream and olives (or eyeballs)

B.E.N.’s Layered Cheesecake

This one was more down our alley. At the very end, there is a party. B.E.N. Bursts out with some delicious layered cake.

Cheesecake Layers
  1. 1 cup unsalted butter, softened
  2. 1 cup sugar
  3. 4 packages (8 oz each) cream cheese, softened
  4. 4 eggs
  5. 1 package (4-serving size) non-instant vanilla pudding and pie filling mix
  6. 2 teaspoons baking powder
Cake Layers
  1. 1 box dark chocolate cake mix (and ingredients to make it as shown on back of box)
  2. 3 containers cream cheese frosting
Cheesecake
  1. Heat oven to 325°F.
  2. Grease 2 (9-inch) round cake pans with shortening or cooking spray. Line bottoms of pans with cooking parchment paper rounds; lightly grease paper.
  3. In large bowl, beat butter and sugar with electric mixer until smooth and creamy.
  4. Beat in cream cheese a little at a time until smooth; scrape down bowl.
  5. Beat in eggs one at a time until well combined.
  6. Add pudding mix and baking powder; beat well until smooth.
  7. Divide batter evenly between pans, about 4 cups per pan.
  8. Smooth top with off-set spatula.
  9. Place pans into a large baking dish and place in oven
  10. Add about 1.5 inches of water into the baking dish (be careful not to get water into the cheesecake)
  11. Bake 50 minutes.
  12. Turn off oven and crack the door. Let the cakes sit for 10 more minutes in the oven.
  13. Cool in pans on cooling racks 10 minutes.
  14. Transfer to freezer and freeze until solid, about 3 hours.
  15. Turn cheesecakes out onto cookie sheet; peel off paper. Store in freezer until ready to use.

  17. While Cheesecake Layers are freezing, Heat oven to 350°F.
  18. Grease 3 (9-inch) round cake pans with shortening or cooking spray.
  19. In large bowl, prepare box cake as directed
  20. Divide batter evenly among pans. (This is different than directed. Use 3 pans, not 2)
  21. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean.
  22. Cool in pans on cooling racks 10 minutes.
  23. Remove cake layers from pans onto cooling racks. Cool completely.
  24. To assemble, place 1 cake layer on serving plate or cake stand. Spread frosting. Place 1 frozen cheesecake layer on top of cake layer; spread frosting. Repeat until all layers are used and frost the entire cake
  25. Refrigerate until cheesecake is well chilled before cutting, about 2 hours.
  26. Store in refrigerator

Will it Sail you to the Stars?

I was a little disappointed with our Alponian Chowder. It just had a bland taste. But the rest was amazing

We’re back with some more space-aged foods from Lilo and Stitch! So get your ohana together and get cooking!

Lilo and Stitch [Week 1] – Loco Moco, Pineapple Shrimp, Berry Smoothie, Cuddles on the Beach & Blue Hawaiian (Virgin), Black Forest Cake

I was super excited to do Lilo and Stitch. I love Hawaiian food and assumed that Lilo and Stitch would have lots of Hawaiian food in it. I was wrong. It did have quite a bit of food in it, but no real Hawaiian food. I kinda took some liberties of the less specific foods to Hawaiianize them. Since there was so much food, we’re splitting this up into 2 weeks!
